I live in New Iberia, LA and when I tell people that I'm from LA the first thing they ask me is if I know how to cook gumbo and boil crawfish.
So I guess to answer your question: they first thing people thing about is the food.

I think about Lousiana hot sauce and cajun cooking. Thats all I think about. Fried shrimp, boiled shrimp, cocktail shrimp, shrimp scampi, shrimp on a stick, shrimp alamode, fried died and apple pied shrimp.
