I want to bake and decorate my own wedding cake. The problem is that my fiance` and I choose a pumpkin cake with cream cheese icing. (we love pumpkin rolls and bread) I cannot seem to find too many recipes that only contain cimmon for spice, with no nuts, no fruit (other than pumpkin) and a not overly sweet frosting. ::sigh:: I was told that a fluffy pumpkin bread recipe might work. If you have any recipes that you think would work well or sites that have a recipe that I have described, would you please answer?

When any family member makes pumpkin bread or rolls, cinnamon is the only spice they use since none of seem to like nutmeg, cloves, allspice, or ginger. We do not like nuts or chunks of fruit in much of anything especially pumpkin desserts.

Have you experimented with a pumpkin muffin recipe ? Muffins are basically like cupcakes and cupcakes are the same as cake. Try a recipe of this in a cake pan instead of muffin tins and see if the outcome is what you like.

You do not have to have it be cakey... You can have pumpkin bread for your wedding if YOU so desire. It is your special day so make what YOU like and be proud of you doing it yourself !!

I applaud your determination... You will do just fine with whatever you choose!

I'm a little confused, do you NOT want nuts and other spices in your cake? Pumpkin is generally flavored with cinnamon, allspice, and nutmeg to bring out its flavor. A pumpkin bread will be much heavier than a traditional cake will be, but if you're ok with denseness, then go for it. You might want to consider talking to a baker about how they would make a pumpkin cake. The recipe is likely to be close to a zuchinni bread recipe, but will contain the spices and nuts. Cream cheese frosting can be as sweet or non-sweet as you'd like. If cinnamon is the only spice you really want to use, then you might want to consider a vanilla cake with cinnamon.....heavenly!
