these are all really easy, super tasty.
Shrimp and Linguine
¾ lb uncooked shell-on medium shrimp (about 20-30), peeled, de-veined and tails removed
¾ cup coarsely chopped carrots (2 medium)
2 large plum tomatoes, seeded and diced
¼ cup sliced green onions with tops
1/3 cup (1 ½ oz) grated fresh parmesan cheese
8 oz uncooked linguine
1 teaspoon olive oil
2 garlic cloves, pressed
¾ cup reduced fat sour cream
½ cup fat free evaporated milk
¼ cup snipped fresh basil leaves
½ teaspoon salt
¼ teaspoon, coarsely ground black pepper
Additional grated fresh Parmesan cheese (optional)
1.Peel and de-vein shrimp; remove tails. Coarsely chop carrots using Food Chopper. Dice tomatoes and slice green onions using Chef’s Knife. Grate parmesan cheese using Deluxe Cheese Grater.
2.Cook pasta according to package directions in Professional (4 qt.) Casserole; drain. Return pasta to casserole; cover and keep warm.
3.Meanwhile, heat oil in Large (10 in.) Saute Pan. Add shrimp, carrots, and garlic pressed with Garlic Press. Cook and stir over medium heat 3-4 minutes or just until shrimp turns pink; remove from skillet and keep warm.
4.Gently heat sour cream and evaporated milk in same skillet over low hear whisking with Nylon Spiral Whisk. (Do not boil.) Stir in Parmesan cheese. Add shrimp mixture, tomatoes, green onions, basil, salt and black pepper; mix gently. Pour shrimp and vegetable mixture over pasta; toss gently to coat. Serve with additional Parmesan cheese, if desired.
Greek Lemon Chicken Soup
2 cups chopped cooked chicken
2 medium carrots coarsely chopped
½ cup chopped onion
1-2 lemons
2 TBSP snipped fresh parsley
1 garlic clove pressed
1 can (10 ¾ ounces ) 98% fat-free cream of chic. soup
3 cans (14 ½ ounces each) 100% fat-free Chicken broth, reduced sodium
¼ teaspoon of pepper
2⁄3 cup uncooked long grain white rice
1. Chop chicken, onion and carrots using Food Chopper. Zest 1 tsp. of lemon using Lemon Zester/Scorer. Finely snip zest using shears. Juice lemons using citrus press or juicer to make ¼ cup. Snip parsley using shears; set aside.
2. Heat Executive 4 qt Casserole over medium heat until hot. Lightly spray with nonstick oil. Add carrots onion and garlic pressed with Garlic Press; cook and stir for 2 minutes.
Stir in chicken and lemon zest, juice, soup, chicken broth and black pepper, bring to a boil. Stir in rice; reduce heat. Cover and simmer over low heat for 15-20 minutes or until rice is tender. Remove from heat; stir parsley into soup just before serving.
Three Bean Vegetarian Chili
Ingredients:
2 teaspoons vegetable oil
2 cups chopped green bell pepper
2 cups chopped red bell pepper
1 cup chopped onion
4 garlic cloves, pressed
1 tablespoon chili powder
3/4 teaspoon ground cumin
2 cans (14.5 ounces each) diced tomatoes, undrained
1 can (15.5 ounces) mild chili beans in sauce, undrained
1 can (15.5 ounces) pinto beans, drained and rinsed
1 can (15 ounces) black beans, drained and rinsed
1 can (7 ounces) whole kernel corn, drained
Toppings such as shredded cheddar cheese, sour cream and snipped fresh cilantro (optional)
Directions:
1.Heat oil in Professional (4-qt.) Casserole over medium-high heat until hot. Add bell peppers, onion, garlic, chili powder and cumin; cook until vegetables are crisp-tender, about 5 minutes.
2.Add tomatoes, beans and corn to casserole; mix well. Bring to a boil; reduce heat and simmer, covered, 45 minutes, stirring occasionally.
3.Ladle chili into soup bowls. Serve with toppings, if desired.
Spicy Sausage & Peppers Penne
Ingredients:
8 ounces uncooked penne pasta
1 pound hot Italian turkey sausage (about 4 links)
1 each: medium green, red and yellow bell pepper, cut into 1/4-inch strips
1/2 cup coarsely chopped onion
2 garlic cloves, pressed
1 can (14 1/2 ounces) diced tomatoes in sauce, undrained
1 can (8 ounces) tomato sauce
2 teaspoons Pantry Italian Seasoning Mix
1/4 cup (1 ounce) grated fresh Parmesan cheese
Directions:
1.Cook pasta according to package directions in Professional (4-qt.) Casserole; drain and keep warm.
2.Meanwhile, cook sausage in Family (12-in.) Skillet over medium-high heat 14-16 minutes or until sausage is lightly browned and no longer pink, turning occasionally. Remove sausages from skillet; cut diagonally into 1-inch pieces and set aside. Cut bell peppers into 1/4-inch strips using Chef’s Knife. Coarsely chop onion using Food Chopper.
3.In same skillet, cook bell peppers, onion and garlic pressed with Garlic Press over medium heat 6-8 minutes or until peppers are crisp-tender, stirring occasionally. Add sausage, tomatoes, tomato sauce and seasoning mix. Cook and stir 1-2 minutes or until heated through.
4.Place pasta in large bowl; pour sauce mixture over pasta, tossing to coat. Sprinkle with Parmesan cheese. Serve immediately.
Yield: 6 servings

get a portable table top grill. the kind that uses sterno cans. get a breast of chicken (hehe i said breast) some thin sliced beef or pork and some jumbo shrimps some mushrooms and onions and green beans. marinade the meats and shrimps in different flavors. you can throw a little of each at a time on the grill as you are seated at the table and add more as needed. have a salad ready and some garlic pasta w/ bread to eat while you are waiting for the first batch to cook.
we did this on valentines day for the first time. mom and daughter were with us and it was real nice but it definately is a romantic meal when done with two. also i had chocolate covered strawberries and i used pillsbury crescents that i made heart shaped.
the meats and shrimp only take a couple of minutes to cook so no need to cook all at once.
for the garlic pasta just cook the noodles and saute garlic in olive oil or butter enough to coat the pasta add salt and pepper to taste
a very nice and romantic meal for sure.
you don't burn anything nor do you have to spend so much time in the kictchen when you can spend the time with her.
and as for going and buying precooked stuff and trying to have her think you made it is dishonest and that is a turn off for anyone.

Salmon is the healthiest way to go... and really easy to make. There are lots of really great and easy recipes for it too... the way i do it is just throw it in the oven at 350 with fresh lemon juice and butter. You can tell its done when it it looks lets shiny in the middle and a little more pink than orange. This goes really well with asparagus, broccoli, rice, potatoes, almost anything. The key to a really good dinner is fresh bread, you don't have to bake it yourself, picking up a daily made loaf from a store is great (or even try those oven biscuits that can cook while the salmon is on). Last don't forget something for desert! That is key!! chocolate mousse maybe (you can make that yourself from a package- VERY easy... just mix and throw in the fridge).
Plan something nice to drink with it (even if it's just sparkling water with a lime on the rim). The little touches really show that you care... and are paying attention!
Lastly- don't let her do the dishes!

Try this... i used to cook this for my bf.
1) Assorted Mini Sandwiches.
Need:
White Bread
Mayonise
Tuna
Crab Stick
Eggs
Fresh Veg. (any)
Chilli Sauce.
Cook:
Im sure u have an idea right?
Mix mayo and Tuna together= Tuna Mayo
Mix mayo and CHOPPED crabstick= Seafood Mayo
Mix mayo and MUSHED BOILED eggs= Egg Mayo
spread each mixture in a bread which cut into four square.
Add Veg. You will get 3 flav. sandwiches.
2) Chicken wrapped with ham and cheese
Need:
Chicken Fillet
Ham
Cheese
Pepper
Salt
Breadcramb
Egg
Cook:
Season the chicken with salt, soya sauce and pepper. Next, place chicken fillet in place, add in ham and the cheese in a layer of 3 layers. Roll or fold them together. Place the roll into egg wash and then roll them into breadcramb. (make sure cover propbably)
Next, deep fry until cook.
3) Panacakes with Rasberry ice cream.
Need
10 tablespoon Flour
2 Eggs
2-3 cups fresh milk
pinch Salt
pinch Sugar
Ice Cream (any as u like)
Cook:
Mix flour, together with eggs and milk, salt and suagr together stir well. Warm saucepan and add abit of butter (prevent stick on the pan) and add in mixtures and make sure cook/ golden brown. Serve with scoops of ice cream.

I've cooked my boyfriend dinner before an all i did was star out with a salad and then the main meal which was a vegetable bash (chopped onions, bell pepper Green and Red, squash, an put like a hand full of Cilantro to give it some flavor an as lo pepper an salt ) with grilled chicken breast squirt a hint of lemon to give the chicken a zesty flavor.. Trust me its a dinner she won't forget because you made it your self and you didn't just take her our to dinner plus when you make it yourself it makes things more romantic.. Good luck choosing what to make..

Filet Mignon under the broiler with 1 tsp soy sauce on each side as it grills. Green beans heated in microwave with 2 slices American cheese stirred in until melted. Tossed green salad. Buy the dough, premade at Trader Joes or Albertsons and the sauce is sold pre-made as well.
All you need to do is add the cheese and toppings, since shes healthy use lots of veges. Something you two can do together.

Ever watch 30 minute meal's by Rachel Ray? Seriously, try going to foodnetwork's web. But I think it has to do a lot with the table setting, candles, music and all that jazz. I sweet dessert wouldn't hurt. ^^
