the main dish will be fried seasoned salmon with steamed asparagus topped with melted butter. is there a way i can cook avocado or should i leave it raw?

You meal shows Class, start it off with Class
Avocado and Ginger Vichyssoise

Ingredients:
1/2 cup butter or margarine
1 medium onion, finely chopped
1 ounce fresh ginger, peeled and grated
1 large avocado, peeled and mashed
2 cups chicken stock
1 teaspoon black pepper
1/2 cup light cream
1 scallion, finely chopped

Instructions:
Melt the butter in a sauté pan. Cook the onions and grated ginger for about 2 minutes. Add the mashed avocado and chicken stock. Mix all ingredients thoroughly, using a wire whisk to eliminate lumps. Simmer slowly for about 10-15 minutes. Add salt, pepper, and cream. Stir and chill for at least an hour. Chill bowls before serving. Garnish each bowl with scallions.

Yield: 6 servings.

Try making a sauce to drizzle on a plate under the fried salmon. Then cut up a few square pieces either on top or on the side as a garnish.

I had this avocado soup at my friend's house before, she also did a baked avoocadodo salad for the apps. I wish I had the recipe here with me at work. Maybe if I find it I will bring it in and edit my answer tomorrow for you.

To answer for Steve G/ response, you can use canned milk, half and half or probably even regular milk, realizing, of course, that it will lack the smoothness, silkiness and richness that only cream offers!
