Those little lines that zig-zag back and forth across chewing gum are from the rollers. The powder on them is used to keep the gum from sticking to the rollers. The lines are actually little spikes that help the rollers move the gum down the line onto the cutting boards as the gum is extruded from the mixing machine. The powder is usually a very finely processed corn starch. Corn starch is used to keep sugar free gum sugar free and to keep the sugar content down on regular gum as well.
