Multigrain Muffin

1 cup whole-wheat flour
1/2 cup all-purpose flour
1 cup oat bran
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon fine salt
2 large eggs
1 large egg white
1 1/4 cups buttermilk
1/2 cup packed dark brown sugar
2 tablespoons vegetable oil
1 cup chopped dried fruit medley
1/2 cup chopped walnuts

Position a rack in the center of the oven and preheat to 375 degree F. Line 12 (1/2-cup) muffin cups with paper liners.
Whisk flours, oat bran, baking powder, baking soda, and salt in a medium bowl.

Lightly beat the eggs and egg white in a medium bowl. Stir in the buttermilk, brown sugar, and oil. Stir the liquid mixture into the flour mixture until just evenly moist; the batter will be very thick. Fold in the dried fruit. Divide the batter evenly among the muffin cups. Top with the walnuts. Bake until firm when pressed gently, about 25 minutes. Turn the muffins out of the cups and cool on a rack; serve warm or room temperature.

CHOCOLATE MARBLE MUFFINS

2 cups self-rising flour
1 cup sugar
half bag of chocolate chips
half bag of white chocolate chips
3 teaspoons melted butter
1 cup milk
1 egg

Preheat oven to 350°F (180C) degrees.
Sift flour. Add sugar and chocolate chips (including white). Beat egg. Combine egg, milk and butter.

Stir until all mixed but if stirred too much it will not rise! Pour into muffin tray.

Bke for 15-20 mins. Delicious muffins that the kids will love!

2 cups all-purpose biscuit baking mix
1/3 cup granulated sugar
2 tablespoons vegetable oil
1 large egg, slightly beaten
1 cup HERSHEY'S Cinnamon Chips
2/3 cup milk
Heat oven to 400°F. Grease or paperline 12 muffin cups (2 1/2-inches in diameter).
Stir together baking mix, sugar, vegetable oil, egg, cinnamon chips and milk in medium bowl just until moistened.
Divide batter evenly into prepared muffin cups.
Bake 15 to 18 minutes or just until browned. Cool slightly; remove from pan.
Makes 12 muffins.

Hi Martin~ Although my favorite recipes do contain fruit or jam, here's one which is primarily flavored with a variety of spices. Enjoy!!

Cinnamon Spiced Muffins
1 1/2 cups all-purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground nutmeg
1/2 tsp ground coriander
1/2 tsp ground allspice
1/2 cup milk
1/3 cup margarine, melted
1 egg
1/4 cup sugar
1tsp ground cinnamon
1/4 cup margarine, melted

In a large bowl, combine flour, 1/2 cup sugar, baking powder, salt, nutmeg, coriander and allspice. In a small bowl combine milk, margarine and egg. Stir into flour mixture just until moistened.

Preheat oven to 400 degrees. Grease muffin cups. Bake 13 minutes until toothpick inserted in center comes out clean.

Meanwhile, combine remaining 1/4 cup sugar and cinnamon in a shallow dish. Roll warm muffins in remaining 1/4 cup melted margarine, then sugar-cinnamon mixture.

Yummy served warm!

Ice Cream Muffins
Use ice cream with chunks of candy or nuts for best results.
Servings: 6-8 Prep Time: 12 Minutes Cook Time: 30 Minutes

1 1/4 cup Self-Rising Flour
1 tbsp sugar
1/4 cup milk
1 pint ice cream, melted (flavor of choice)

Mix self-rising flour and sugar together with a wire whip until thoroughly mixed. Add melted ice cream and milk on top, and mix the with wire whip until batter is smooth. Pour batter into a standard muffin tin to about 2/3 full. Grease the tin if you are not using muffin cups. Bake at 375°F for 30 minutes, or until toothpick comes out clean. Remove, cool slightly.

Peach Ice Cream Muffins

1 1/2 cup self rising flour
2 cups peach ice cream, softened
1 egg, beaten
2 T. oil
Jimmies and colored sugar for garnish

Place flour in a mixing bowl; stir in ice cream, egg and oil until just moistened. Fill greased or paper lined muffin cups 3/4 full with batter; bake at 425 for 15-20 minutes. Sprinkle with jimmies or colored sugar while warm. Makes one dozen.

DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C).
In a large bowl, stir together the flour, baking powder, salt and sugar. Make a well in the center. In a small bowl beat egg, milk and oil together. Pour all at once into the well in the flour mixture. Mix quickly and lightly until moistened, do not beat. The batter will be lumpy. Gently stir in jam.
Pour the batter into the prepared pan and bake at 400 degrees F (205 degrees C) for 25 minutes or until golden.

INGREDIENTS
2 cups all-purpose flour
1/2 cup white sugar
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1/3 cup vegetable oil
1 egg
2 tablespoons melted butter
1/4 cup white sugar
1/2 teaspoon ground cinnamon
DIRECTIONS
Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
In a medium bowl, combine flour, 1/2 cup sugar, baking powder and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Brush tops of hot muffins with 2 tablespoons melted butter. Dip in mixture of 1/4 cup sugar and 1/2 teaspoon cinnamon. Serve warm.

1 (8 ounce) can tomato sauce with onion
1 (6 ounce) can tomato paste
1 garlic clove, minced
1 teaspoon dried basil
1/8 teaspoon pepper
6 English muffins, split and toasted
1 (3 1/2 ounce) package sliced pepperoni
1 1/2 cups shredded provolone cheese
1/4 cup chopped green peppers

1. Combine tomato sauce, paste, garlic, basil, and pepper, mixing well. Spread evebly over cut surface of English Muffins. Arrange pepperoni slices over sauce. sprinkle with cheese, and top with green pepper. Bake at 400F for 5 minutes or until thoroughly heated.

2 sticks butter, melted
1/2 pint sour cream

Preheat oven to 350 degrees F.
Combine all ingredients and spoon into small, un-greased muffin tins. Bake for 20 to 30 minutes.

Oatmeal Nut Muffins
Ingredients:
2 cups quick oats
1 c chopped nuts - walnuts and/or pecans
1 c. chopped dates
1 1/4 c. plain yogurt
1 1/4 c warm water
1/2 c melted butter or oil
1/2 c whole wheat or spelt flour
1 c unbl wh fl
1 Tblsp baking powder
1/2 tsp baking soda
1 tsp salt
1/3 c. unbleached cane sugar or brown sugar
3/4 cup chopped walnuts
Muffin Method:
Preheat the oven to 375 degrees & oil 2 muffin pans, eighteen cups total
Mix the oatmeal, yogurt and water, set aside
Chop the nuts and dates and add them to the oatmeal with the melted butter or oil
Mix the dry ingredients in a separate bowl
Pour the dry ingredients into the wet, and mix lightly with just a few strokes
Spoon the mixture evenly into the muffin cups
Bake for 20 - 25 min, middle of the oven, until browned & firm to the touch
Cool on a rack for 5 minutes, then run a knife around the edges of the muffins & turn them out on the rack. May be eaten immediately

Carrot Zucchini Muffin Recipe

3/4 cup plus 2 tablespoons packed brown sugar
1/4 cup chopped pecans
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1 cup whole-wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup canola oil
2 large eggs
1 cup applesauce
1 teaspoon vanilla extract
3/4 cup lowfat butter milk
1/2 cup carrot, shredded
1/2 cup zucchini, shredded
Heat oven to 400 degrees. Spray muffin pan with nonstick cooking spray.In a small bowl, mix 2 tablespoons brown sugar, pecans and cinnamon and set aside. In a medium bowl combine both flours, baking soda and salt and whisk together.
In a large bowl, combine remaining 3/4 cup sugar and oil whisk until combined. Add the eggs and whisk well. Add the applesauce and vanilla and whisk together.
Add 1/2 of the flour mixture and mix. Add 1/2 of the buttermilk and whisk until just combined. Repeat with remaining flour and buttermilk. Gently fold in carrot and zucchini just until mixed. Pour batter into prepared muffin pan and top with the pecan mixture. Bake for 20 minutes or until an inserted toothpick comes out clean.
Makes 12 servings
Serving Size: 1 muffin

Cream Cheese/Lemon Muffins

A really great recipe for cream cheese lemon muffins. They are a perfect lazy Sunday breakfast treat served with cantaloupe or other fruit. The aroma of them baking will get the sleepiest of sleepyheads out of bed.
1 egg
1/2 cup plus one teaspoon oil
1/2 cup milk
2/3 cup sugar
4 ounces cream cheese -- room temp
1 1/2 cups all
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 lemon
Mix egg, oil, milk and sugar together. Cut cream cheese into small pieces, mix with 2 tbsps. flour. Grate 1 lemon rind into batter. Add rest of ingredients. Eliminate salt and baking powder if you use self-rising flour. Mix ingredients and spoon into 12 greased muffin tins. Bake at 375 degrees for 20-25 minutes. Topping 2 tbspns lemon juice (fresh), 1 tbsp. sugar. Mix to form sugar. Pour over warm muffins
