It is called a gerund. You use the gerund to make the verb into a noun by adding -ing. With "avoid" , you need a noun after it, like "avoid snacks" or "avoid bad people", so you add -ing to make the verb into a noun. In the other two sentences, you are using the verb as the subject of your sentence. The subject must be a noun so you add -ing to turn it into the gerund. For example.

Sleeping is my favorite activity.
Eating makes me sleepy.

"Learning" is an active verb. In other words, it describes an action that is currently happening instead of occurring in the past or future.

For example: "You are LEARNING English" versus "You will LEARN English" or "You will LEARN to speak English".

or

"You are PLAYING with barbies" versus "You will PLAY with barbies" or "Did you PLAY with barbies?"

There's a reason why English is the hardest language to learn.
