Yes, because transfers (missionaries being moved from one area to another) can happen so quickly and without warning, most will keep a record of who they are teaching, and what they have taught them so they don't suddenly get forgotten if/when new missionaries come in. I mean, it would be rude just to completely ignore or ditch people like that.
Oh, I should add that some missionaries are better at keeping records than others, so if you get new missionaries that seem confused, or not sure where you are with them - be patient, they're doing their best with the info they got.

YES! Just a few days ago, some nice Mormon boys stopped at the house. They wanted to "talk" I told em my kids were sick, all 4 of em, and it was a bad time. They made a little note in their notebook, wrote down my address, took my name and asked if someone could come back. I said sure, cause quite honestley, I like debating with em. So yes, they do. Cute, huh? :)

Probably, I was told by a Mormon that they keep details, i.e. house numbers, of uninterested people.

Yes, they do. As mentioned it is because they can be transfered weekly and if someone wants to know more about the church, then it's only polite to keep in contact with them.
