Put 'em in water and they'll be fine. I wouldn't leave them for more than a couple of days because the container may grow mold, but aside from that the potatoes would be fine.

You can but be careful because if you leave them sitting in water for too long, they will absorb the water and give you a soggy mash. This means that you will not be able to add as much cream or butter for flavor...it'll get soggier.
This is a good alternative....
Make-Ahead Mashed Potatoes
5 pounds potatoes, russet or Yukon Gold
6 ounces cream cheese, cubed
8 ounces sour cream
½ cup milk
2 teaspoons onion salt
Pepper, to taste
Peel, and cut the potatoes into 2-inch chunks. Place in a large pan, and cover with cold water. Place pan over medium-high heat and simmer until the potatoes are tender when pierced with a fork. Drain.
Mash the potatoes with a hand-held potato masher, or with an electric mixer until smooth. Stir in the cream cheese, mixing well. Add the sour cream, milk, onion salt and pepper, and mix well. Spoon into a casserole dish. Cover and refrigerate or freeze. To heat, cover and bake at 350° F. for 60-90 minutes, or until hot.
Serves 8.

Sure, I do this all the time. :) I don't know about storing it in a metal pot though. Not sure how it would affect the potatoes. I always peel and cut mine up and put them in a large glass mixing bowl and fill it with water. The next night when I'm ready to cook them, I drain and rinse them really well, then put them in the pot with fresh water.

Sure is. I do it all the time. I also have learned to put the potatoes in the microwave and cook 10 -15 minutes in water. Let cook peel and make as usual.

It will be fine but get them into the water immediately after cutting, and add a teaspoon or two of white or cider vinegar to the water to help keep them from turning brown.

Yup it is just fine..
Just make sure that they are immersed in water after the peeling.
Also adding a tinge of lemon juice to the water does not discolor them and keeps them fresh as before...

Absolutely! Just cut them up, put them in a bowl, cover with cold water and stick the bowl in fridge. Seriously, they don't get mushy or discolor.

Yes, just be sure to place them in cold water and then place them in the fridge. Change them into fresh, cold water if you plan on boiling them. If you plan on cutting them up for frying, drain them, rinse them in fresh water, pat dry with paper towels before cooking.

we do it in the restaurants all the time. just make sure they are completely covered otherwise they will turn brown. to ensure they are completely covered put a clean wet dish cloth over top or papertowel.
