Even though fresh is technically better because all the nutrients are retained, frozen is better in the sense that you can easily stock up so you can eat vegetables at every meal, which is more important than whether they are absolutely fresh. Frozen vegetables are not cooked, so most of the vitamins are still there. Use a cooking method that doesn't require draining away all the vitamins in the cooking water, or just thaw and use in salads.

Another way that frozen foods can be better is that the food can be preserved when properly ripened. Fresh foods may have to be picked when underripe in order to survive the trip to the grocery store and sitting on the shelves, unless you buy from a local farmer's market.

Canned is bad because vegetables are overcooked, oversalted, and a lot of the vitamins are cooked or drained away, and frequently taste so awful that you will stop eating vegetables altogether.

I saw on food network an episode HAM on the street...

Anyway, he is a awsome cook and decided to compare fresh vs canned. At best, no one could tell the difference and at least 50% of people thought that the canned "tasted better". So don't be afraid to use canned ingredients.

Regarding the nutrients, obviously fresh is better, but sometimes it is worth saving the time to use canned.

Frozen veg contains more nutrients than fresh veg.
When picked vegetables lose nutrients due to UV light in sunlight.
Frozen veg lose very little nutrients as they are generally frozen quite quickly after being picked.
Don't overcook your veg as you will destroy the nutrients anyway.

Fresh is always best, then frozen then canned. Even the fresh can lose their nutrients when they are cooked.

I prefer frozen veggies in the winter, and local fresh produce in season.
So called "fresh" out of season stuff has been around for how long?? Gets shipped from a long way off. Not environmentally sound.
But it's tempting isn't it?

Home canned or home frozen are the best. They contain no preservatives and they taste the freshest. They take work, but it's worth it in the end.

canned is pretty bad but better than nothing
frozen is very close to fresh so it is good
