Yes, you want to put some olive oil or other non-stick business onto the potatoes or the griddle. They're so full of sugar there's a short distance from golden brown to burned so keep an eye on them. I peel mine, cut them about 1/2 inch thick, and mess with them very minimally while they cook. Mmm mmm yummy.

I suppose you could..have only done it with the frozen sweet potatoes that are already semi-cooked. However, recently i quartered some small ones and added to the pan with some red potatoes in a marinade of olive oil, black pepper, salt and a bit of garlic. Placed them on the same pan as the red potatoes and roasted them in the oven..Talking about some good YEAH. But keep in mind they are more dense than your ordinary potato so therefore takes a bit longer to cook. My grandmother used to take them and and cut them very slender, rolled them in corn flake crumbs and fried them in a skillet with butter.

Yes. Don't expect them to have the same texture as regular potatoes though. Sweet potatoes tend to get soft when cooked. I haven't tried frying them, but I have tried baking them like fries, which didn't work out too good. I ended up with mushy sweet potatoes. Tasted good though!!
