I love parmesan on pizza. And I love Feta on pizza.
Unless she's running some ultra Italian restaurant where everything is old school, it's OK to put whatever cheese you want on Pizza!

Parmesan cheese DOES melt, but the powdery kind in the green can is usually so dried out that it doesn't melt well. Use fresh shredded parmesan that you can buy in the dairy case and it will melt on the pizza! The powder in the can is CRAP fresh shredded off a chunk is the best but the bagged kind in the dairy case is acceptable and it will melt,and for best results, mix it with the mozzarella. Alfredo sauce is made with melted parmesan,butter and cream so it DOES melt.

Traditionally (meaning how it is actually done in Italy - at least in Napoli), the mozzarella is sprinkled directly on the pizza dough, followed by the tomato sauce, which is then topped by a good parmesan (like a Locatelli or another parmesano reggiano). Finish with a few fresh basil leaves. Italians would not think of leaving off the parmesan.

You can put whatever you like on a pizza.
When I make pizza I put freshly grated Parmesan on the top, it does melt. If you use the ready 'grated' dry fine powdered Parmesan I'd imagine that would form a dry lump, or crust.

You grate the Parmesan over the pizza at the table, just as they do in Pizza Express. It won't melt.

I love parmesan cheese on pizza.
Why does your mom care if you use it? If people aren't supposed to put it on pizza then why do they always serve it with pizza in restruants?

i add the powdered parmesan to pizza after it is cooked as it will just brown rather than melt, it's lovely on lasagna too! but the fresh stuff will melt and who is your mum to say what the italians do wiv their food.

parmesan does not melt it congeals to the softest cheese on the pie. however she's still wrong , good block parmesan on a quattro formaggio pie after baking (and not that kraft powdered C!@p) it the best idea,well mabye feta.........

You can put whatever you want on a pizza. I love parmesan on mine... my daughter puts ranch dressing on hers (I think that's nasty, but I've known others who do it too)... to each his own.
