Chili's chicken chili

¼ cup vegetable oil
½ cup diced onions
1 1/3 cups diced green bell pepper
2 tbsp diced seeded jalapeño pepper
3 tbsp fresh minced garlic
4 ½ cup water
8 tspn chicken base
2 tspn lime juice
2 tbsp sugar
3 tbsp cornstarch
3 tbsp ground cumin
2½ tbsp ground chili powder
4 tspn ground paprika
4 tspn dried basil
2 tspn freshly minced cilantro
1 ½ tspn ground red pepper
½ tspn ground oregano
½ cup crushed canned tomatillos (see note)
1 x 4 oz can diced green chilies, drained
2 x 15 oz cans navy beans or small white beans, drained
1 x 15 oz can dark red kidney beans, drained
3 lb diced cooked chicken breast
shredded cheese and sour cream, for garnish, optional
tortilla chips
Preparation & Cooking Instructions
In 5-quart or larger pot, heat oil over medium heat.
Add onions and sauté along with bell pepper, jalapeño and garlic.
Cook until vegetables are tender.
In another container, combine water, chicken base, lime juice, sugar, cornstarch and seasonings. Add to vegetable mixture.
Add tomatillos and diced green chilies to pot; bring to boil.
Add beans and chicken; simmer 10 minutes.
Serve topped with cheese and sour cream if desired, with tortilla chips on the side.

HOT DOG CHILI SAUCE

2 lbs ground beef
1 large onion, chopped
4 cloves garlic, peeled and minced
1/2 cup ketchup
1/4 cup barbecue sauce
1 tablespoon hot sauce
2 tablespoons yellow mustard

Saute beef with onion. When beef begins to brown, add garlic. Turn heat to high and cook one more minute.
Stir in remaining ingredients and reduce heat to low. Simmer 10 minutes and remove from heat.

Line hot dog buns with a steamed or grilled hot dog and top with Chili Sauce mixture, then sprinkle with chopped onions and shredded Monterey Jack or Colby cheese.

Great to take along on Picnics!

I'm sorry to break it to you, but their chili isn't the chili you think it is. Although, working at a top-notch restaurant in the city where, Robert DeNiro, was a frequent customer, we made hell of a chili. Here's the recipe.

INGREDIENTS
2 (29 ounce) cans tomato sauce
2 (28 ounce) cans peeled and diced tomatoes
2 cups diced onion
1 tablespoon Italian seasoning
1 pound bacon, diced
2 pounds spicy sausage
3 pounds lean ground beef
1 (32 ounce) bottle hickory smoke barbeque sauce
1/2 cup chili powder
4 (15.25 ounce) cans kidney beans, undrained
2 (1 ounce) squares unsweetened chocolate, chopped
DIRECTIONS
In a large pot or Dutch oven over medium heat, combine tomato sauce, tomatoes, onion and Italian seasoning.
In a large skillet over medium heat, cook bacon until slightly crisp. Drain and stir into the pot.
In the same skillet over medium heat, cook sausage until brown. Drain and stir into the pot.
In the same skillet over medium heat, cook the beef until brown. Drain and stir into the pot.
Stir the barbeque sauce and chili powder into the pot; taste and adjust seasonings. Stir in the kidney beans and chocolate and simmer until flavors are well blended. Serve.
