My fiance is a strange & picky eater. He doesn't eat anything that has a sauce on it. and he won't eat any casseroles. I feel like I cook the same things over and over and this is why I like to eat out so much. Any ideas for recipes that don't involve sauces or casseroles?

My husband was the same exact way, untill we started cooking together. Not only is it romantic but you also share some quality time together as a couple, sharing and exploring new ideas in the kitchen. It might help and it will work. As for recipes, these are just some of which I cooked for my hubby too:

Herbed Pork Chops

INGREDIENTS
6 pork chops
1 1/2 teaspoons garlic salt
1 teaspoon dried rosemary leaves, crushed
1/2 teaspoon dried basil leaves, crushed
1 orange, thinly sliced
1 lemon, thinly sliced
1/2 cup coffee flavored liqueur
1/2 cup water
2 teaspoons cornstarch
2 teaspoons chopped green onion
DIRECTIONS
Trim excess fat from chops. Heat skillet over medium heat, and rub a piece of fat over the bottom of the pan. Cook chops, turning occasionally, until browned on both sides (4 to 6 minutes).
Season chops with garlic salt, rosemary, and basil. Arrange slices of orange and lemon over meat, and pour coffee liqueur and 1/4 cup water over all. Cover, and simmer for 30 minutes, or until meat is tender.
Blend cornstarch with remaining 1/4 cup water, and stir into pan liquid; cook until thick. Sprinkle with green onions, and serve.



Honey Baked Chicken


INGREDIENTS
1 (3 pound) whole chicken, cut into pieces
1/2 cup butter, melted
1/2 cup honey
1/4 cup prepared mustard
1 teaspoon salt
1 teaspoon curry powder
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place chicken pieces in a shallow baking pan, skin side up. Combine the melted butter or margarine, honey, mustard, salt and curry powder and pour the mixture over the chicken. Bake in the preheated oven for 1 1/4 hours (75 minutes), basting every 15 minutes with pan drippings, until the chicken is nicely browned and tender and the juices run clear.



Baked Tilapia

INGREDIENTS
4 (4 ounce) fillets tilapia
2 teaspoons butter
1/4 teaspoon Old Bay Seasoning TM, or to taste
1/2 teaspoon garlic salt, or to taste
1 lemon, sliced
1 (16 ounce) package frozen cauliflower with broccoli and red pepper
DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees F). Grease a 9x13 inch baking dish.
Place the tilapia fillets in the bottom of the baking dish and dot with butter. Season with Old Bay seasoning and garlic salt. Top each one with a slice or two of lemon. Arrange the frozen mixed vegetables around the fish, and season lightly with salt and pepper.
Cover the dish and bake for 25 to 30 minutes in the preheated oven, until vegetables are tender and fish flakes easily with a fork.

Have you thought about making things that would normally have sauce but putting it on the side so that you can have it but he doesn't have to? In the mean time here are a couple of ideas.

Chicken breasts coated with parmesan and thyme then baked for 35min or until done.


15 Minute Chicken Soft Tacos

Prep: 5 min
Total time: 20 min
Makes 5 servings, 2 tacos each

1 Tbsp. oil
1 lb. boneless skinless chicken breasts cut into strips
2 C water
1 C your favourite salsa
1 pkg. or 1 ½ Tbsp of taco seasoning mix
2 C minute rice, uncooked
10 flour tortillas
¾ C shredded cheddar cheese

HEAT oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 6 min. or until cooked through.
ADD water, salsa and seasoning mix; stir. Bring to boil. Stir in rice; cover. Reduce heat to low; cook 5 min.
SPOON chicken mixture evenly onto tortillas; sprinkle with cheese. Fold up sides of tortillas to enclose filling

There are a lot of casserole type dishes that would be great in a pita or tortilla. Perhaps this would change it enough for him that he wouldn't think that it was a casserole. Good luck and perhaps it should become his job (at least half the time) to make dinner. I decided a few years into my marriage that I was not making some of my favorite dishes because my husband didn't really like them, and that things were going to change. Because I was the primary meal maker that I would make what I felt like making and if he wanted to eat he would eat what I made or fend for himself. He has been happy to eat what I make and if he ever grumbles I just remind him that he doesn't make the meals, I do.

I won't lash out at your husband too much, he's had a silver spoon in his mouth probably and mommy and daddy did everything for him. But how bout I share my past?!?

However, for me growing up, my parents wouldn't make me a seperate dinner because the food looked bad to eat or smelled weird or just sounded nasty. It would be either you eat this and enjoy to like it or go upstairs and go to bed. Well, I choose to eat. I thank my parents for that, and never buying junk food for me to fill up on.

My little cousin, is a picky eater, she's a big cry baby and has to get what she wants, more of a drama queen, so yeah all she eats is Pizza, Chicken Nuggets, or Pastina-Real healthy huh?!? I just want to tell my aunt not to make her special dishes anymore. It's boring to eat over her house as well, it's always prepared or fastfood, therefore-they're all a bit overweight.

Sauces and Casseroles, OMG! I use sauces everynight, they're all different ofcourse, and put on top of either pasta or meats.

He needs to grow-up just a little bit...

CHICKEN, PLAIN AND SIMPLE

Chicken legs and thighs
Soy sauce
Salt and pepper

Preheat oven to 375 degrees. Do not disjoint parts. Simply rub with soy sauce and sprinkle with pepper and a little salt. Place in a casserole (glass or earthenware, something which will hold the heat better than a metal pan). Bake 40 to 45 minutes.

GUACAMOLE CHICKEN SANDWICH

2 hamburger buns (or torta/sandwich bread of your choice)
1-2 avocadoes, chopped in small bits or mashed with spoon, 1 more avocado sliced lengthwise
1-2 pickles sliced lengthwise
1-2 Roma tomatoes chopped, 4 Roma tomatoes sliced lengthwise
1 chopped Jalapeno or Serrano pepper
1/2 cup chopped lettuce
2 boneless skinless chicken breasts, boiled
1 onion, half sliced into small bits, half sliced into rounds
grilled bacon (one piece)
1 lime
1 tablespoon of salt
1 cup chopped cilantro
1 cup bread crumbs
2 slices of Cheddar cheese
corn oil for frying

Make small incisions in chicken breast before boiling. Season chicken as desired. Mix the chicken pieces with the bread crumbs and fry with round onions on skillet.


To make guacamole:

In a mixing bowl, season chopped or mashed avocadoes with salt and juice of lime. Add cilantro, chopped onions, sliced Roma tomatoes, and chilies; mix well. Refrigerate until the rest of the preparation is finished.
Toast bread.

Once the chicken has finished frying, top with sliced onions, cheese, bacon, lettuce, pickles, and sliced avocadoes.

Spread guacamole on toasted bread and serve with either sliced pickles or sliced avocadoes on the side.

I couldn't agree more than with "flywho" !!

Other than a plain grilled steak (or fish), there is very little that will satisfy him - unless he cooks it himself.

When I was a bit younger, in order to qualify, you had to be able to make any of 90 sauces from memory. Sauces, however humble, are the basis of all creative cookery.

Stop cooking for him or find a new fiancee !!

Take turns cooking. This way, he can SHOW you exactly what he likes to eat. Make a rule that you eat everything he cooks, and he eats everything you cook.
Whoever doesn't want to eat what the other has cooked can just go hungry or make themselves a snack.

His problem is that people have catered to him his w hole life.
Stop catering to him.
Tell him to eat or don't, but it's time for him to grow up.
The sooner you stop enabling his primadonna ways, the sooner he can join the rest of us in real adult life.

what is wrong with ..,
salads and pizza?
burger and chips?
Pizza?
A fry up?
Fish and chips?

Or anything like that...

Because some are unhealthy.. i don't eat them everyday!!!(I aint fat)

These are all my own tested recipes that my picky eaters love. Enjoy!

Magically Moist Chicken

¼ cup mayonnaise *
10-12 Pepperidge Farm Hearty Wheat Crackers *
4 boneless chicken breasts or pork loin chops

Preheat oven to 350 F. Put mayonnaise in a plastic ziplock bag. Put crackers in a food processor and grind into crumbs. Put crumbs in another zip lock bag. Add chicken to mayonnaise and coat. Remove and add to crackers and coat. Be sure to coat well. Put chicken in shallow casserole dish. Bake for 15 minutes, turn over, and bake for another 15 minutes.

·- You can substitute anything thick and creamy for the mayonnaise, like ranch dressing, miracle whip, horseradish sauce, etc. Different crackers can be used as well, but I like these the best.



Chicken and Sausage Jambalaya

5 to 6 hot links (or other hot sausages), cut into bite size pieces
4 to 5 boneless chicken breasts, cut into bite size pieces
garlic salt
pepper
1 tbs butter
1 cup chopped onion
½ cup chopped celery
1 tsp minced garlic
2 cups white or brown minute rice
2 cups canned low sodium chicken broth

Place sausages in large deep pot with water to a depth of about 1 inch. Cook over medium-high heat until water boils away, about 10 minutes. Continue cooking the sausages until lightly brown. Remove sausages with slotted spoon and set aside.

Salt and pepper chicken pieces. Add butter to pan and cook over medium heat until browned, about 5 minutes. Remove chicken and set aside.

Add onion and celery to pot and sauté them until they are soft, about 5 minutes. Add the garlic and chicken broth, bring to a boil, reduce heat to low and cover. Simmer for about 10-15 minutes. Add reserved sausage and chicken, stir. Makes 4-5 servings.



Don Joses’s Fajitas

Marinade:
1 clove garlic, minced
2 tbs corn oil
1 tbs lemon or lime juice
1 tbs worcestershire sauce
dash of salt and pepper

4-5 boneless chicken breasts, cut in strips or 1 ½ lbs of shrimp, shelled and de-veined
1 tbs corn oil 1 large onion, sliced
1 green bell pepper, thinly sliced
1 red or yellow bell pepper, thinly sliced
12 small flour tortillas, heated

Combine all ingredients in the marinade together in a plastic container or zip lock bag, mix. Add chicken to coat. Marinade for at least 15 minutes, turning several times. Add oil to large skillet and heat on medium-high. Add chicken and saute until brown. Add onion and bell pepper and saute until cooked but slightly crisp. Serve on tortillas. Garnish with sour cream and shredded Cheddar or Jack cheese.


Chicken Cordon Bleu

4 boneless chicken breasts, pounded flat
2 tsp Dijon Mustard or Sweet Hot Mustard
2 slices swiss cheese, cut in half
4 thin slices proscuitto or ham (I prefer honey ham)
1 egg, beaten with 1 tbs water
¼ cup flour mixed with 1/4 tsp garlic salt, and dash of pepper
1 cup bread crumbs
¼ cup butter or margarine

Spread each chicken piece with ½ tsp mustard. Place half slice of cheese and ham on each piece of chicken. Fold breasts in half. Dip in flour, then egg, then crumbs. Place on rack and refrigerate for at least 30 minutes to allow crumbs to set.

In large skillet, heat butter over medium heat. Fry chicken about 5 minute on each side. Transfer to baking dish and bake for about 15-20 minutes at 350F. Makes 4 servings.



Cream Cheese and Chicken Roll Ups

4 boneless chicken breasts, pounded flat
1 container flavored Philly Cream cheese (Chive & Onion, Smoked Salmon, Garlic & Onion, etc)
8 strips of regular or maple flavored bacon

Preheat Oven to 350 F

Spread each chicken breast with cream cheese putting more towards the center of
the chicken breast. Roll up chicken from the thickest end to the thinnest keeping as much cream cheese inside as possible. Wrap one piece of bacon around chicken covering the open ends. Then wrap another piece going the other direction crossing the previous piece to cover all openings. Secure with toothpicks or unwaxed dental floss.

Put in casserole dish or square pan. Bake 15 minutes, turn over and bake 15 more minutes. Drain off most of the grease and broil on each side for a few more minutes until bacon is brown and crisp. Remove toothpicks or dental floss and serve as is or cut slices and spread more cream cheese on them to melt.

Serving Suggestions:
I serve with garlic flavored noodles and green beans. Any flavored cream cheese will work and if you use the smoked salmon one, the maple bacon tastes best or you can drizzle the regular bacon with maple syrup.



Carmelized Pork Carnitas

1½ lbs boneless pork butt or shoulder
2 tbs brown sugar, packed
1 tbs tequila
1 tbs molasses
½ tsp salt
¼ tsp pepper
½ tsp cumin
2 cloves garlic, finely chopped
1/3 cup water

Cut pork in 1 inch cubes. Place in crock-pot and top with all other ingredients. Cook on low for 8-10 hours. Remove with slotted spoon and place on cookie sheet and broil until slightly brown on top. Serves about 10. Serve with corn tortillas and pico de gallo.
