instead of bread for a sandwich, how about lunch meat and cheese roll ups on tortillas
Pita pocket sandwiches
My son loves mini meatballs
Pasta salads
Casseroles like cheesy broccoli chicken -- a favorite of my son
Toddlers like anything they can pick up in their hands and eat themselves.
Fruit slices or chunks
Chunks of cheese
cute cut-out sandwiches

Whatever you fix, let the child help out. They'll eat better if they were part of fixing it. Carrot sticks, celery sticks, pb&j cut into shapes, tuna sandwiches, mini pizzas, corn dogs, french fries...most can be made in a short amount of time. Check on Rachel Ray's website for kid friendly meals too. One of my kids favorite snacks, for that once in awhile special thing, is candy sushi.

Depending on the age of child i always found that kids like cut up fruit what ever they like, if the child is old enough to help you will find that the will enjoy eating it as the feel that they made their lunch themselves and its a good way to get fruit in to them

My kids love to make "little pizzas" You make them out of English muffins for the "crust", pizza sauce and then cheese and whatever toppings they want. Super easy, super quick, and the kids love 'em.
Other ideas grilled cheese and tomato soup for dipping, chicken nuggets and honey mustard for dipping, corn dogs and ketchup for....well you know.....My kids have taught me that almost any food can be dipped and kids love to dip!

My kids love "Dog Biscuits" all you do is take a can of pilsbery cresent roll dough and rolls them around hot dogs, bake in the oven at the temp it says on the cresent rolls and for about 5 minutes longer that the directions say. :) Enjoy, I usually serve them with gold fish :)

Sandwiches are good if yoru child will eat them. If you child is like mine she likes something one day and then the next she won't like it. This week she is into baked pizza pockets, kind of like pizza pops but they are baked and fairly healthy! Who knows what she will like next week, LOL. Good luck!
