Obviously I would take the eyes off and then cook them..I just got back from vacation and would like to know if I can use the bag I have.

And here's another thought for when your potatoes start getting old and soft ... Microwave them, chop them up with your kitchen shears, and add them to your dog's bowl of food -- i.e., stir the potatoes into the canned food and/or the dry food. It's a very economical food for your dog and also good for them. That way they don't go to waste. (I always buy potatoes in 10# bags -- because they're so cheap that way. Usually $2.50 for 10#. Then, if they start to go soft and wrinkly before I eat all of them, I mix them in with the dog's canned/dry food. The dogs love them.

Yes, It's the green that's not good for you. Keep in mind that the eyes are shoots forming another potato plant. The beginning of these shoots require food/sugar from the potato. The potato will be less flavorful when eyes have been allowed to form.

Yes you most definitly can. Just dont eat the eyes. Make sure you cut them off while peeling. Make sure the potato isnt rotten while cutting it.

yeah just take the eyes off and make sure they are not to soft if they are soft chop them in half and bury them and you will have potatoes for next year
