first spray your casserole dish with non stick spray
layer the bottom of you casserole dish with frozen hash browns, top that layer with bacon strips now scramble up some eggs (enough to completely cover and rise over the layers) and pour it in, now top that with shredded cheese and now top that with some green onions. put it in the oven at 350 for about 45 minutes. it is so good.

Breakfast Casserole Supreme:
1¼ hours 20 min prep
12 servings
1 9x13 inch casserole
1/4 cup margarine
1 small sweet onion, chopped
1 small green pepper, chopped
2-3 medium tomatoes, chopped
1 (24 ounce) bag frozen hash brown potatoes
12 eggs, beaten
1/2 lb cubed ham or thin sliced ham or cooked crumbled bacon or sausage
3 cups cheddar cheese, shredded
1. Melt margarine and place in the bottom of 9" by 13" baking pan.
2. Spread potatoes (still frozen is okay) in bottom of the pan.
3. Sprinkle chopped vegetables over potatoes.
4. Add salt and pepper to taste.
5. Sprinkle meat over potatoes and vegetables.
6. Note: At this point you may continue or casserole may be refrigerated overnight.
7. Pour beaten eggs over potatoes.
8. Bake at 350 degrees for 45 minutes.
9. Remove from oven and sprinkle cheese evenly over top.
10. Bake another 5-10 minutes or until cheese is hot and bubbly.
11. Remove from oven and let set for approximately 5 minutes.
12. Cut into 2.5"-3" squares and serve with a spatula. Enjoy.

BREAKFAST CASSEROLE
1 1/2 pounds sausage
6 slices bread, cubed
1 1/2 cups shredded cheddar cheese
6 eggs
1 teaspoon salt
2 cups milk
1 teaspoon dry mustard
4 ounces mushroom pieces, drained
1/4 cup green bell pepper, diced
1/4 cup green onion, diced
Brown sausage, drain. Layer bread in bottom of 9 x 13-inch well-greased baking pan. Sprinkle sausage over bread. Add cheese. Beat eggs and mix with remaining ingredients. Pour slowly over cheese. Refrigerate overnight. Bake at 325 F. for 45 minutes.
Note: Other ingredients may be added or substituted for the vegetables.

2 cups broken blue tortilla chips
1 1/2 cups milk
5 cups day old biscuits
18 eggs
1/2 cup chopped red bell peppers
2 1/2 cups Mexican white cheese, shredded
Cactus Sauce, recipe follows
Preheat 10-inch Dutch oven on open fire. Meanwhile, soak chips in 1/2 cup of milk. This will be your bottom crust. Soak biscuits with remaining ingredients, add extra milk if needed for a wet consistency. Salt and pepper, to your taste. Remove oven from the fire, put chips in first then add the biscuit mixture. Return Dutch oven to the fire. Be careful when putting coals on top and bottom. Cook for 20 to 30 minutes or until slightly firm. Serve with cactus sauce.
Cactus Sauce
14 ounces diced chiles
3 to 4 ripe avocados
Puree all ingredients together and refrigerate.
Yield: 6 to 8 servings
Prep Time: 10 minutes
Cook Time: 0 minutes
Inactive Prep Time: 2 hours

This is a big hit at our sleep-overs and camping trips:
12 eggs, blended well with 6 tbsp of water, salt & pepper to taste
6 cups of shredded cheese
6 sausage links or 1/2 pound of ground meat, pre-cooked and drained
1 pkg of poppin-fresh bisquets or rolls
1/2 stick of butter
Heat oven to 350 F. or pre-heat dutch oven in fire.
Take the butter stick and wipe the dish thoroughly to coat.
If using an oven, lightly scamble the eggs before placing in the casserole dish (make sure they are still wet). If using a dutch oven, lightly scramble the eggs in the dutch oven, leaving them wet.
Mix in sasauge/meat and cheese. Mix well. Top with biscut dough/roll dough. Cook for 45 mintues or until tops of bread is browned. Serve hot and enjoy!

Butter six slices of bread on one side, and place buttered side down in a 13X9 baking dish. Fry one pound of bulk pork sausage (hot or mild--it's up to you) and drain well. Stir in 1 tsp. of dry mustard into the sausage. Spread sausage evenly over top of bread in pan, and sprinkle 2 c. shredded cheddar cheese evenly over top of that. Mix 2 c. milk with 6 eggs and pour evenly over sausage and cheese. Cover and refrigerate overnight. The next morning, preheat your oven to 250 degrees, uncover casserole and bake 50 - 60 minutes or until done and set.

BREAKFAST CASSEROLE
4 slices bread
1 lb. bacon or sausage
1 c. grated sharp cheese
6 eggs
2 c. milk
1 tsp. dry mustard
1/2 tsp. salt
Pepper
Grease 13 x 9 inch casserole. Tear bread and put in casserole. Brown and drain bacon or sausage. Crumble over bread. Sprinkle with cheese. Beat eggs with milk, mustard and seasonings. Pour over mixture in casserole. Bake for 35 minutes at 350 degrees.
Best if prepared the night before, cover and refrigerate. Breakfast cooks with no effort or mess.
Serves 4-6.
EASTER BREAKFAST HAM & EGG CASSEROLE
4 c. French bread, cubed
3 c. ham, diced
1/2 lb. grated American cheese
6 eggs
4 tsp. flour
1 1/2 tsp. dry mustard
Dash of Tabasco sauce
4 c. milk
4 tbsp. melted butter
Salt to taste
Layer bread, ham and cheese in a 9"x13" greased baking pan. Pour over the remaining ingredients which have been beaten together in order given. Refrigerate in covered pan. Bake 1 hour at 300 degrees.
HASH BROWNS BREAKFAST CASSEROLE
3 c. croutons
1 1/2 c. bulk sausage, browned and drained
2 c. milk
1 can cream of mushroom soup
2 lb. bag frozen hash brown potatoes, thawed
2 c. sharp Cheddar cheese, shredded
4 eggs, well beaten
3/4 tsp. dry mustard
1/2 c. milk
Place croutons in 9 x 13 inch pan. Top with 1 1/2 cups of cheese and the sausage. Cover with mixture of eggs, milk and mustard. Refrigerate overnight. Mix mushroom soup with milk and pour over the top. Cover the potatoes and top with 1/2 cup cheese. Bake at 300 degrees for 1 1/2 hours or at 325 degrees for 1 hour.
BREAKFAST CASSEROLE
4 tbsp. oil
4 c. raw potatoes, coarsely shredded
6 eggs
2 c. milk
6 slices bread, cubed
1 c. grated cheese
1/2 tsp. salt
1 tsp. dry mustard
1 lb. sausage, smokies or bacon
1 can mushrooms, optional
Preheat oven to 425 degrees. Mix the oil and potatoes. Press in 9 x 13 Pyrex. Bake for 15 minutes.
Meanwhile, brown sausage, smokies or bacon and drain and crumble. Cool. Beat eggs, add milk, salt and mustard.
Add bread cubes and sausage and grated cheese (and mushrooms, if used). Put into the potato crust that has cooled. Place in refrigerator overnight. Bake for 45 minutes at 350 degrees.

My mom makes this every Christmas morning:
Sausage & Egg Casserole
Ingredients:
6 eggs
2 cups shredded cheese
2 cups milk
8 thick slices Italian bread
16 oz. sausage (12 oz, is also ok)
1 tsp. salt
1 tsp. dry mustard
Brown sausage and drain. Beat eggs, cube the bread, and add all other ingredients. Mix well with the sausage and pour into a greased 9X13 in. glass baking dish. Cover and let sit in the refrigerator overnight.
In the morning bake at 350°(uncovered) for 45 minutes to one hour. Serves 8.
