They use an industrial recorder (I can't remember the name of it now), but the unit is meant to precisley record and playback at EXACTLY the same speed. This is why they use a clapperboard in movies - they can synchronise the sound of the clapperboard on the recorder with the visual of the clapperboard slamming shut... Some spoken audio is redone/mastered in the studio by having the actors come and an speak into a studio microphone while they watch themselves on screen. Obviously you can't get everything right when you're on the set!
