-they're too lazy or busy to cook
-it's easier to buy and eat
-they don't care about their health
-people believe that it "tastes better" than fresh food
-consumers will often buy whatever they have a coupon for...fresh foods don't have coupons :-(

sometimes the processed foods come premade, just need to microwave or do a quick stove-top and heat it. Other reasons are the processed foods contain chemicals that make them taste better than fresh food, which is misleading but that happens to be the reason. Sometimes processed foods come in cans or frozen bags and are already pre-cut. It saves time from having to chop/cut the fresh foods.

Easy, fast, and usually pre-made. Less cooking for people with hectic schedules, or just lazy. Or people who don't believe they can cook or don't feel the need to learn how since you can just pick up meals in the freezer section or canned or box mixes where you just add water.

I think it's OK once in a while. Nobody ever truly wants to cook from scratch every single day. And sometimes processed food just tastes better. I have my lazy days too when I actually have Velveeta in the house, or use frozen meatballs when I know perfectly well how to make my own.

I guess it boils down to convenience.
