Not all at the same time! Unless you're REALLY HUNGRY!

Remember, after you eat all this, you'll feel sick and bloated and still depressed!

Creamy Fettuccini Alfredo

1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
¾ cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)
½ cup margarine (I use I Can’t Believe It’s Not Butter Light)
½ cup milk (I use 1% or 2% low fat)
8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one)

In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.
Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.

Serving Suggestions:
salad, and garlic bread.



Hot Fudge Pudding Cake

During the baking a cake layer forms on top and a rich chocolate sauce appears on bottom. Serve with vanilla ice cream or whip cream.

1 cup Bisquick
1 cup sugar
3 tablspoons plus 1/3 cup of unsweetened cocoa powder
1/2 cup milk
1 tp vanilla
1 2/3 cup hot water
Powdered sugar (optional)

Mix bisquick, 1/2 cup sugar and 3 tbs cocoa in a greased 8 inch square baking dish. Stir in milk and vanilla until well blended. Sprinkle evenly with remaining 1/3 cup cocoa and 1/2 cup sugar. Pour on water. Bake in preheated 350 F oven for 40 minutes or until top is firm. Dust with powdered sugar. Serve at once in bowl with sauce spooned over cake. Make 6 servings.

These are pretty low fat but you would never know it from the taste. They are both fantastic recipes. These are my comfort foods and I don't have to feel guilty the next day for overindulging. Which usually makes me even more depressed. Hope it helps!

Chicken and dumplings. This is the easy way; Buy one pre-roasted chicken, three or four cans of chicken stock and a can of biscuits. Strip the meat of the bones and add to a pot, cover with stock, bring to boil. While coming up to boil, cut biscuits into thirds and dredge in flour. Drop them into the boiling liquid. They are done when they float and the inside is dry. This meal just gets better everytime. Cooking time, including preperation should be under an hour! Cheer up!

Ice cream always cheers me up. Choose your favorite combination and dig in. Its best if you just eat it right out of the carton. Don't scoop it into a dish. There's something much more satisfying about stabbing your spoon with hostility into a cardboard or plastic tub of creamy goodness compared to a bowl.

melt chocolate chips in the microwave stirring at 15 seconds intervals - when fully melted stir in coconut and then spread on wax paper once hardened break into chips and eat this is delish try it Enjoy!

CHICAGO BAKED BEANS

1 lb. ground beef
1/4 c. brown sugar
1/2 lb. bacon, cut up
1/2 c. chopped onion
3 tbsp. vinegar
2 tbsp. mustard
1 can baked beans
1 can kidney beans
1 can butter beans

Saute ground beef, cut up bacon, and onion (drain fat from mixture). Add remaining ingredients. Put in casserole dish and bake 1 1/2 hours at 325 degrees. Stir several times while baking.

COMFORTING POTATO SOUP

6 med. sized yellow finn potatoes
4 lg. leeks
1 clove garlic
1 tbsp. chopped fresh basil
1/2 lb. Gruyere or Swiss cheese, grated
3 parsnips
Juice of 1/2 lemon
1 tbsp. black pepper
1 c. milk
8 tbsp. butter

Wash and peel potatoes and parsnips. Chop into 1 inch pieces. Put in 4 quart pot; add water to cover and bring to a boil. Once boiling, reduce to simmer. Slice leeks crosswise and wash well. Saute in melted butter in saucepan until limp.
Place cooked potatoes and parsnips and leeks into food processor or blender with some of the water from the pot and puree. Return to pot; add pepper, basil, lemon, and garlic. Stir. Bring to a gentle boil. Turn heat to low and slowly add milk, stirring constantly. Simmer, stirring often, until soup thickens. Ladle into bowls; sprinkle cheese over top. Makes 8-10 servings.

"HOLY COMFORTER POTATOES"

2 lb. pkg. hashbrown potatoes, thawed
Pt. of sour cream
1 stick of butter, melted
Can of cream of chicken soup
1 med. onion, chopped
1/2 tsp. salt
1/2 tsp. pepper

Mix above ingredients. Put in greased 2 1/2 quart baking dish. Cover with grated cheese (3 to 4 cups longhorn Cheddar). Bake at 350 degrees for 45 to 50 minutes.


MADELINE'S "COMFORT" CORN BREAD

2 c. yellow cornmeal
2 c. flour
2 tbsp. sugar
1 tsp. salt
1 tsp. baking powder
1 tsp. soda
2 c. buttermilk
2 eggs
1/4 lb. butter (or butter)

Melt butter in 9x12 inch baking pan. Set aside. In large bowl place cornmeal, flour, salt, baking powder and sugar. Add the eggs (slightly beaten) to the dry ingredients and use hands to mix in until you get a crumbly texture. Add buttermilk and soda. Stir well. Add melted butter. Stir until mixed. Bake 400 degrees, 20-25 minutes. This is very moist and "custardty".

eat a bowl of oatmeal. 1. it's healthier and 2. has loads of fiber and 3. you shouldnt be emotional stress eating. eating when depressed is a big no no. i havent had an emotional day yet that would cause me to stress eat but i have my malt o meal ready when it happens. good luck!

Mashed potatoes and macaroni and cheese are my faves for moping.

Then there's always chocolate and ice cream. . .
