This is my favorite tomato soup recipe, I always serve it with grilled cheese on thick crusty bread:

2 tablespoons unsalted butter
1 medium onion, finely chopped
3 cloves garlic, minced
3 26 1/2-ounce canscrushed tomatoes
5 1/4 cups Chicken Stock
3 sprigs fresh oregano, plus more for garnish
1/2 cups half-and-half
Salt and freshly ground black pepper

1. Melt butter in a medium saucepan over medium-low heat. Add onion and garlic, and cook, stirring, until translucent, about 6 minutes.

2. Add tomatoes, stock, and oregano, and bring to a boil. Reduce heat, and simmer gently until thickened, about 45 minutes. Remove oregano sprigs.

3. Slowly add half-and-half, stirring constantly. Season with salt and pepper. Garnish with oregano, if desired. Serve hot.

Fresh Tomato Soup

Once you try this delightful version of tomato soup with just a hint of citrus and the perfume of basil, you'll swear off canned tomato soup for good.

1/4 cup olive oil
2 large yellow onions, diced
1 tablespoon finely grated orange zest
18 ripe Roma tomatoes, quartered
Heavy cream
Salt and pepper to taste
Fresh basil leaves

Using a heavy saucepan set over medium heat, sauté onions in olive oil, stirring occasionally until tender and translucent, about 10 to 12 minutes.
Stir in orange zest and tomatoes and continue to cook over medium heat stirring occasionally to prevent scorching, about 20 minutes or until the tomatoes have broken down and rendered much of their liquid.
Puree soup in batches using either a food processor or blender. Then strain the mixture through a food mill or medium mesh sieve placed over a clean saucepan, discard remaining peel and seeds. Reheat soup mixture gently over medium-low heat, season with salt and pepper. Add heavy or light cream to taste (anywhere from 1/2 cup to 1 1/2 cups or until you achieve the consistency and flavor you desire.) Season to taste.
Just before serving (about 1-2 minutes before) add fresh basil, torn into small pieces to the soup.
Serves 4 to 6.

Take one Kg. Fresh Red Tomatoes. Wash, peel and cut them in half to deseed them completely. Make sure the green hard parts and the stems are out. Put them to boil in a litre of water. Cool and then blend. Add salt to taste. Mash, do not chop, 10-15 cloves of garlic, one large onion pureed. Saute (fry lightly) the mashed garlic and the onions in 50gms. of butter. (Preferably begin with the onions first as they take longer to cook). While the puree is on the stove add 100 gms of cream. Once the cream is added stir well and then add the garlic and onions and butter. Take a hand-full of peppercorns and put them in the grinder, not too fine, or the taste of fresh pepper will be lost. Add only as much as you think you'd like in the soup (1 tsp is what i like). Check salt (always remember, when tasting for salt, food that's hot can be misleading, so when hot food tastes like it has slightly less salt its OK)and add a small amount of any herb you like, for eg. parsley or oregano. Garnish with a dash of cream and some rosemary. Serve with croutons(small cubes of bread deep fried) or garlic bread.

1kg of ripe tomatoes fresh from your garden, peeled and chopped
2 brown onions, finely chopped
1 teaspoon brown sugar
1 teaspoon fresh basil, chopped (dried bought basil is OK)
2 garlic cloves, crushed
1 litre of chicken stock, or vegetable stock
85g packet of instant noodles
.
Method :-
Plonk a dob of butter in a large saucepan, heat and add onions and garlic. Saute for a bit.
Then chuck in the chopped fresh tomatoes, sugar and 1/2 the stock.
Bring to boil and allow to simmer well for 10 mins or so.
In the last 2 mins, throw in the chopped basil.
.
Transfer this to a food processor, bit at a time, and process well into a puree.
Return the pureed tomato back to the saucepan and add the remaining stock and 400ml of water. (I use extra stock for flavour)
Bring to boil for 3 mins or so then chuck in the instant noodles and boil a further 3 mins.
.
Allow to cool and either eat it right away or place in containers and freeze. (I do that)
