There are many! The simplest is to cook it with the lid off - the water will evaporate, resulting in a thicker soup. You can also puree soups in batches in a food processor or using an immersion blender for added texture. Mashed potato flakes or heavy cream stirred in a little at a time will also make good thickeners.

Depends on the soup. Personally, I'd just turn the heat up a little and let the water cook off. That will always thicken it up. And if it gets too thick, just drop in a cup of water and stir.

i agree it depends on the type of soup. if the soup is fully cooked try putting the flour stuff in a separate pot. and add the broth off the soup, whisk well add back into the other pot..

sometimes i will pour the brothy part into another pot and whisk about 2 egg yolks per litre of stock and pour it into the stock, ( oh i almost forgot the broth should not be boiling just under it ) then heat for a few minutes add to the rest of soup and serve. this is how to thicken chicken lemon rice..yummo

i almost forgot .. .. that idea for potato flakes is a good one and i will keep it in mind.. thx :)

There is a very easy way to thicken anything. Add some instant mashed potato flakes.

Mix flour into a small amount of melted butter and stir it into soup to make a stew like consistency. This takes practice not to get lumps. I am a pinch and snip cook, sorry I can not give you exact measurement.

Mix cornstarch with COLD water. Then add it to the soup. Mix it well, and bring it to a boil. (You won't know how thick it'll get until it comes to a boil.) Finish cooking it like you normally would.

Good luck!
