I have a 7 y/o American Shorthair female cat. She's otherwise very healthy -- eats, drinks, plays, etc. -- but sometimes her back legs shake and she has to lie down because they're weak.

Has anyone ever heard of this? It comes and goes every week or so. Please let me know if you've ever encountered this. I'm very worried for her. Thanks.

One of the vets first concerns is going to be heart, then spinal or nerve damage.
Does he ever mouth breath when playing to hard? If so this will further indicate a heart problem. I have lots of cat who stay with us who have been taking heart meds since they were quite young and do very well. But some......
Is your kitty a manx or normal tail? Manx kitties are more prone to spinal abnormalities.

This sounds like you need a trip to the vet. She may have spinal problem that causes weakness in her legs sporadically. X-rays are in order.

sounds neurological and if you get her to the vet now it could save your cat and your wallet.

ataxia?(loss of muscle co-ordination)...maybe. Take her to the vet.
