Carrot buns
75 g fresh yeast
2 ½ dl lukewarm water
½ l milk
1 l finely grated fresh carrots
1 dl melted butter
1 dl concentrated orange juice
1 ½ dl Kesella ®
½ dl light bread baking syrup
1 ½ tablespoon salt
½ l whole wheat flour
2 l special flour with extra protein
Dissolve yeast in lukewarm water.
Heat milk to 37 degrees C.
Add the ingrediences into a mixing bowl of a food processor (or a blender).
But add only 1 liter of the special flour.
Beat in food processor for 5 minutes.
Add remaining flour and beat a couple of minutes to form a soft dough.
Cover and let rise in a warm place, about 40 minutes.
Punch dough down.
Shape into 40 balls and dip one side of each ball in flour.
Place them on greased baking sheets.
Cover and let rise for 30 minutes.
Bake at 175-200 degrees C for 15-20 minutes.
Cool under a kitchen towel.

Homemade Cinnamon Swirl Bread:
4 hours 3 hours prep
5-10 servings
2 packages fast rise yeast
2 cups scalded 2% low-fat milk or whole milk
1/4 water (80 - 110°)
1/2 cup sugar
2 eggs
1 cup butter flavor shortening or real shortening
unsalted butter
7 1/2-8 cups all-purpose flour
1/2 teaspoon salt
melted butter or margarine
cinnamon
sugar
raisins or chopped walnuts (optional)
1. Mix both packages of yeast and water together.
2. In large bowl, mix together sugar and salt.
3. Also add butter to bowl, but do not mix.
4. Pour scalded milk over butter, sugar and salt.
5. Add 3 cups of flour and mix until soft dough forms.
6. Mix in eggs and yeast into dough.
7. Add the remainder of the dough until stiff dough forms.
8. Take out of bowl, cover, and let rest 10 minutes.
9. Kneed for about 8 minutes until soft, elastic dough forms.
10. Place in lightly greased bowl, turning once to cover dough.
11. Cover and let rest in a warm place for 45 mintues to an hour, or until double in size.
12. Punch down and let rest another 45 minutes, or until double again.
13. Take out of bowl and let rest for 5 minutes.
14. Divide dough in half, and roll each half into a ball.
15. Starting with the first half, roll out into a 15" x 7" rectangle.
16. Brush melted butter all over top of rectangle.
17. Starting with the cinnamon, sprinkle a thin layer over the rectangle.
18. Then cover the cinnamon with a layer of sugar.
19. The a layer of cinnamon.
20. Repeat until you have about 4 or 5 layers of each.
21. Repeat steps 12& 13 with the second half of the dough.
22. Roll up each rectangle, jelly-role style, and place in greased bread pan.
23. Cover and let rest for 45 minutes.
24. Place in hot oven (375) for 45 minutes to an hour.
25. Crust should be crispy and a golden brown.
26. If wanted, 5 minutes before bread is done, butter can be brushed on crust to give it a creamier taste.
27. If crust browns to fast, put aluminum over bread.
28. tip- if nuts or raisons are wanted in bread, place them on top of the cinnamon/sugar layers before rolling up.
