I have half a small gammon joint, left over from Sunday lunch yesterday (so already cooked), any healthy recipe ideas to use it up for dinner this evening ?

You could cut it into cubes and add it to carbonara, or make egg-fried rice and put the cubed gammon and mushrooms in it. Could also put into a toasted sandwich - the list is endless. Just noticed you wanted it to be healthy - have it cold, sliced with salad, or make pea and ham soup with it.

Make a quiche with it. A gammon, and tomato quiche with a cheese top would go down very well. Whilst you have the oven on, slip in two jacket potatoes. Serve with a salad. Easy dinner and cheap too.
Or an omelet with above if you can't be bothered to make pastry.
A creamy mustard sauce (basic white sauce with a tablespoon of Dijon mustard and cream stirred in served on pasta.

Sweat of onions and garlic in olive oil, add gammon chopped into smallish pieces, season to taste, add water and a stock cube. Heat through and add frozen peas about ten minutes before serving. You can liquidise it with a mixing wand or leave it lumpy. I sometimes add cubed potatoes about 10 minutes before adding the peas.

Boil up some potatoes and mash them with plenty of butter, add a grated onion and then dice the gammon and mix together. turn into oven proof dish and put grated cheese on top. melt under the grill and serve with a green salad.

For a really quick, tasty and filling dish, dice it up, add a couple of cooked skinless boneless chicken breasts, a fried onion, some cooked mushrooms and 1/2 a tin of Campbells condensed chicken and mushroom soup (don't dilute it!)

Top with either potato slices or bought puff pastry yummy one chicken, ham and mushroom pie!

make a flan case,put diced gammon on base,cover with beaten eggs and grated cheese,top with tomato slices and cook in moderate oven till eggs are set.serve cold with a nice salad.mmmmmmmmmm

I don't know how much it weighs but assuming it's around 5 pounds it would probably take 6-7 hours in the slow cooker. Unless you have a recipe for it, I would do it in the oven.
