If you want super easy try:

2 pounds boneless beef round, cut into 1-inch cubes
2 10-3/4-ounce cans condensed golden mushroom soup
1 medium onion, sliced
1 8-ounce container dairy sour cream chive dip

In a 3-1/2- or 4-quart slow cooker stir together the beef, soup, and onion.

Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Stir in dip.

Serve over hot cooked noodles.

1-1/2 pounds beef stew meat
1 tablespoon cooking oil
2 cups sliced fresh mushrooms
1/2 cup sliced green onions
2 cloves garlic, minced
1/2 teaspoon dried oregano, crushed
1/4 teaspoon salt
1/4 teaspoon dried thyme, crushed
1/4 teaspoon black pepper
1 bay leaf
1-1/2 cups beef broth
1/3 cup dry sherry
1 8-ounce carton dairy sour cream
1/3 cup all-purpose flour
1/4 cup water

Cut up any large pieces of stew meat. In a large skillet brown meat, half at a time, in hot oil. Drain off fat.

In a 3-1/2- or 4-quart slow cooker place mushrooms, onions, garlic, oregano, salt, thyme, pepper, and bay leaf. Add stew meat. Pour beef broth and sherry over all.

Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Discard bay leaf.

If using low-heat setting, turn to high-heat setting. In a medium bowl whisk together sour cream, flour, and water until smooth. Stir about 1 cup of the hot liquid into sour cream mixture. Return all to cooker; stir to combine. Cover and cook about 30 minutes more or until thickened and bubbly.

Serve over hot cooked noodles and sprinkle with parsley.

It’s all very simple: forget the recipes that call for cubed beef, bell peppers, oregano, CANNED SOUP!!!??? and all the rest. You never serve Stroganoff with: rice, bolied or mashed potatoes, or noodles. It HAS to be served with deep fried straw potatoes.These are potatoes that have been sliced as thin as matchsticks. Oh, you NEVER use stewing, frying or Sirloin beef; it has only to be beef fillet. This is an authentic recipe from the Ukraine.

Beef Stroganof - serves 6 – 8

Ingredients
1 tablespoon dry mustard powder
1 tablespoon sugar
butter or oil for frying
3 large onions, sliced
450gms fresh mushrooms, sliced
1 Kg fillet of beef cut into 1 cm, strips
salt and freshly ground black pepper
600ml sour cream
2 good tablespoons of fresh parsley, finely chopped
Deep fried straw potatoes (optional)

Method
1. Combine the mustard and sugar in a bowl with a little water to make a paste. Let the flavours mingle while completing the recipe.
2. Heat some butter in a large, heavy-bottomed shallow casserole dish. When it just crackles, add the sliced onions, reduce the heat to low, and stir. Gently soften the onions, covered for about 20 minutes, stirring occasionally. During the last 10 minutes, uncover and add the mushrooms. Remove from the heat, drain the mixture on kitchen towels and set aside in a bowl.
3. Heat some more butter in the casserole dish. Drop in half the beef, stirring with a wooden spoon, turning the strips over to brown evenly. Transfer with a slotted spoon to the bowl with the vegetables; brown the remaining beef.
4. When completed, return the beef and vegetables to the casserole dish, together with the mustard and sugar mixture. Season to taste with the pepper and salt then add the sour cream, a little at a time, stirring continuously. Cover and heat through for about 5 minutes. 5. 5. Serve with a light scattering of the parsley and top with the straw potatoes, if desired.

OmiGod tinned mushroom soup in a Stroganov???? Pass me the barf bag!! An easy & fairly authentic classic recipe :- use tail end of fillet steak cut into strips, add salt, pepper & lots of paprika to some flour then roll the meat in this mixture, shake off the excess & put the strips to one side (make sure they are in a single layer otherwise they will stick together) meanwhile take finely chopped onions or shallots & sliced mushrooms & saute them in a frying pan - remove & keep to one side, turn the heat up on the pan add a little oil & butter & QUICKLY fry the meat - you can keep it pink if you prefer, replace the onions & mushrooms into the pan, add a little brandy & set alight to burn off the excess alcohol, add some soured cream or whipping cream bring to the boil & serve with rice or noodles. N.B. a classic Stroganov NEVER contains peppers, you may add some sliced gherkins if desired. Altho` the dish sounds complex once you have done all the prep the acrual cooking should take ne more than 4 - 5 mins

Easy Beef Stroganoff:

3¼ hours 5 min prep
4 servings

1/2 cup water
wide egg noodles

1. Crock Pot: Rinse and drain cubes well.
2. Add all ingredients into crockpot.
3. Cook on low for 8-10 hours.
4. Serve over noodles.
5. Oven: Rinse cubes well.
6. Add all ingredients into casserole dish.
7. Bake, covered at 350 degrees for 3 hours.
8. Serve over noodles.

i think, non of you ever saw a real stroganof. the meat is tenderloin, and tenderloin only. so that brings your cooking time down to minutes instead of hours.
Ok. First you stir fry in a very hot pan, tenderloin strips. only shortly please. if you see, they draw water, take em out. put some more oil in the same pan and then fry stripes of onions and bell peppers. in the meantime you season the beef with some pepper, salt and paprika powder. also you season the still frying onions, peppers with paprika powder. don't be shy with it. add a good shot of vodka, scratch it loose. add some heavy cream, some gravy and stripes of pickles. (take the sweet and sour ones, not the kosher). bring it to a boil and let it thicken. turn of the heat and add your beef. stir and eat with noodles or mashed potatoes.
this recipe should not be over 30 minutes, incl. preparation.

I don't have a specific recipe...when I need one, I go online to find one...HOWEVER....if you want an easy recipe, look for one that uses a slow cooker. It's a perfect method of cooking this dish, as the beef will turn out so tender that it falls apart. Perfect for busy people, too.

Take your pick, but if you are looking for easy I recommend the second one, "Simple Beef Stroganoff" from Allrecipes.com. I use it often, tastes great and is super quick with very few ingredients. Good luck!
