Wrap in silver foil with a slice or two of lemon and a nob of butter in it. Fold the silver foil and place on a baking tray. Thats the only way I ever cook fish. So much easier

Keep it simple, i have some rainbow trout defrosting as i type, chop the head of but leave on the tail scour the flesh 3 times on each side squeeze some lemon juice over and then sprinkle salt and pepper bake in the oven on 180 or equivelent for 10 /12 mins.

For a really quick and easy meal you can steam trout fillets in the microwave with the juice of an orange and some fresh Dill. Add some potatoes which you've rubbed with garlic and olive oil and roasted, together with some asparagus. Yum :)

Put them into a buttered oven-proof dish, season and sprinkle with flaked almonds and chopped parsley. Cover with foil and bake at 160 degrees for about 20 mins. Serve with baby boiled potatoes, and a selection of veg (I like stir-fried asparagus, mushrooms, baby corn and carrots) or side salad. I had this on saturday. Oh - dont forget the wedge of lemon x !

Rainbow trouts are very tasty, a superb taste so do not spoil it and stick with some very simple recipe. almond trout is very good. you could have it with baby potatoes (with the skin) cooked in butter, with a little parsley on top.
Eat with a nice white wine like a german or alsatian gewurtztraminer

I like fillets of trout dipped in seasoned flour and fried and then I deglaze the pan with lemon juice and creme fraiche, add a bit of fresh chopped dill to the sauce, pour over the trout and top with crispy lardons of streaky bacon. Serve with new potatoes and green beans. Tasty as...

The best way to cook a trout is to wrap it in newspaper and put it in the oven. Once it is cooked you unfold the paper and the skin will have attached to it so you have have a skinless trout with great taste. that's how i always do it.

There is a cool way to bake fish. You encase the fish in some type of clay and then bake it and after it is done you use a hammer to break the fish out of the clay. I think you can find this on the internet or ask a gourmet chef how to do it.

Personally, I do my trout like sew:
1 large baking tray
1 can fulminated foam retardent
100gm butterscotch
Liverwurst - 1 roll
Tinned cranberries
bunch catnip
Chop the trout into larger that bite size portions. Marinate in the foam retardant overnight and then wash thoroughly. Dress with the catnip, and stuff each section with a piece of liverwurst of equivalent size. Place in the greased baking tray and grill on maximum for 52 minutes.
Serve with beetroot reduction and grated carrot.
