In other words, is dried out food as good for your body as normal food?

No. The drying process damages some vitamin and some will just evaporate away.

The most healthy foods are sometimes the frozen foods.

Frozen vegetables are picked near peak ripeness and quickly frozen. They will have very little damage to the vitamins in them.

Fresh vegetables are often picked before they are really ripe to allow for transportation time. They don't produce some of the vitamins that would normally be made if allowed to ripen "on the vine".

Otherwise, in general, preservation will yield lower nutritional value. However, the preservation is still important as it allows food to be stored and transported. Its pretty hard to grow strawberries in Alaska in the winter....

They add vitamins and nutrients to make up for any lost during processing.

I think that fresh food is always the best bet and always better for you.
