something easy. Hmmm
beans on toast is too easy!!
omelette is ok but not if u don't like eggs as a main meal.
how about a nice pork caserole
with mashed/creamed potatoes and carrots + peas
the casserole part is easy as long as u cook it slowly. u can put the carrots in the mix takes about 1.5 hours. it just so happens i am looking at a Somerset Pork casserole mix from Coleman's right now. looks yummy and it really is easy peasy!!
or u could have sausage egg and chips
or chilli con carne. i have a mix for that too. it is easy
or u could try a chicken curry, either tikka massala or korma. if u buy the ready made jars it is sooo easy. buy a couple of small chicken breasts, wash and cut into bite sized chunks. put about 1.5 litres (3/4 inches) of boiling water into a wok or saucepan. heat the water so it boils fairly rapidly. add the chicken and 'broil' for about 3/4 mins. drain off the water and add the sauce. simmer for about 10/12 mins. cook rice (microwave sachet is easiest) put the rice on plate in a ring and pour the curry in the middle. couldn't be easier.

Easy Pasta Bake

I tin tomatoes
1 tin tuna
Some cheese, chopped into cubes
Enough cooked pasta for however many you are feeding.
Pinch of herbs (oregano, basil etc).

Put it all into a baking dish, stir, add some pepper if required, and heat in oven for 20 mins or so.

It sounds strange, but it's nice served with a dash of soy sauce.

Really easy, really tasty.

Saussage and lentils casserole
You need lentils (Le Puy are very good one)
one onion, chopped
garlic
a carrot, sliced
bacon, sliced like lardons
1 oxo vegetable cube
saussage (cumberland one are yummy)
you can put a tomato, peeled and seeds removed
sage
water to cover that (follow the instruction on the lentils box)
enjoy with a nice red wine

fancy something very easy?
1 leek, sliced and golden in butter. Add water and a potato, cut in squares. cook gently 45 min. then blend it. serve with sour cream on top and ground nutmeg
buon apetit

For a filling snack meal.

1 tin of Pilchards in tom sauce. They come in three sizes. Small - OK for one person, Medium - OK for two people, Large - OK for four people.

Two slices of lightly toasted bread per person.

One fish per slice

Pour tom sauce over

Sprinkle with Thyme or Rosemary

Cover with grated cheddar

Grill until cheese melted and beginning to go brown.

Slice diagonally so it looks pretty

Serve hot.

You can butter the toast before adding your pilchard is you wish, I prefer to open the fish and place them whole on the bread but it is ok to squash them with a fork too.

Dead easy and cheap too. You can of course give double portions!

How about a nice omlette? Just chuck in anything you have. Whisk up a couple of eggs with a little milk. Fry up a little bacon and mushroom, pour the egg over the top, then finish it under the grill. Have with chips!

Sausages and winter mash (with green veg or carrots if you like)

Well the sausages bit is grill/bake (or fry as a last resort, though they taste better done in the oven).
The winter mash can be whatever root veg you like, really, but this is a great starter: spuds and parsnips (twice as much spud as parsnip), peel, chop, boil, drain. Add a lump of butter about the size of a small matchbox, a dash of milk, and mash till smooth.

Another yummy mash variation is just spuds but with grated cheese (plus mustard if you like) mashed in with it. Again, a dash of milk makes the mashing easier.

Now I'm hungry! :-D
