The Lion And Swan Hotel is a 16th Century 3 star Inn situated in the market town of Congleton from around 45 pounds in the City vicinity, situated at Swanbank, Congleton.
My geography is not real hot, but I presume it's south of Chester. There's also a link to some places in the suburbs of Chester, but that may be too far North for you.
The most informative site, but it may cost a bit more is via the British Tourist Authorities site, linked from Tourism rankings below - which may also be useful for you to choose a suitable location first. I hope this is helpful

There is a warner breaks hotel called Alverston Hall, foods lovely. Very old place, but has new extensions, golf range, entertainment, pool and everthing. Also see Crewe Hall, also very old. There is also a tiny old one in Frodsham Cheshire called the Old Hall, again lovely food. There is loads, too many to mention, it is a very historic area.
