Tasty Turkey Toast

Serve a triangle or two for a tea, or remember the recipe for an easy lunch. All Roman Meal breads make wonderful tasting and nutritious toast.
Makes 1 sandwich. Toast 2 slices Roman Meal bread. Spread 1 slice with 1 tablespoon light cream cheese. Top with 2 ounces thin-sliced turkey and 1/2 cup baby spinach leaves. Close with remaining toast slice. Cut in half or quarters to serve.

In between toast as a sandwich it has to be tomato's with plenty of ground black pepper but if it is just sliced toast with a topping it is hard to choose between sardine and tomato fish paste, cheese or just plain butter (not a soft spread)
