Potato patties for breakfast!

Leftover mashed potatos,
add
1 egg...combine well.

Fry 3-4 inch patties (2-3 heaping tablespoons) on a well-oiled pan over medium heat. Turn when brown.

Serve w/links or bacon with a coupla eggs and toast...yummy!

POTATO CAKES

Servings: 6

2 c Mashed potatoes
1 ea Egg white, slightly beaten
2 T Chopped onion
2 T All purpose flour
1/8 t Salt
1 ea Pepper to taste
1 t Oil

In a medium size bowl, combine potatoes, egg white, onion, flour, salt and
pepper. Meanwhile, heat oil in a large skillet over medium high heat.
When hot, put about 2 tablespoons potato mixture for each cake into
skillet. Cook until well browned, then turn with a spatula and cook other
side until brown. Continue making takes, keeping first ones warm. Cal:
74, Fat: 1 g.

In Finland they bake Potato Rieska
No rising, no kneading bread.

Leftover mashed potatoes
4 dl water
50 g margarine
1 teaspoon salt
2 dl pot barley
1 dl flour

Combine leftover mashed potatoes, softened margarine, cooked pot barley and salt well as if you were mixing for a pie crust.Turn dough out onto a lightly floured surface. Work dough a couple of times, then shape dough into 8-9 pieces. Flatten the pieces, thickness ½ cm. Prick them with a fork. Bake in the oven for about 15 minutes at 225 degrees C.
Serve warm!
You don´t have to add pot barley.
You can use barley flour and all purpose flour. Just make a soft dough with mashed potatoes.

My kids love Meat & Potatoe Pie.

1 lb. ground beef
1/2 pkg. onion soup mix
1 can mushroom soup
1/2 tsp. garlic salt
1/2 tsp. pepper
1/2 C. rolled oats or soda crackers
1 egg
2 C. mashed potatoes (approx.)


Preheat oven to 350° F. Add all ingrediants to ground beef (except for mushroom soup) and mix well. Press prepared ground beef mixture into a pie plate. Cook until well browned in the center, draining off any drippings in pan. Whisk mushroom soup until smooth, then spread on the top of the meat pie. Top with left over mashed (or freshly mashed) potatoes. Sprinkle generously with shredded mozzerella cheese (or slices) and return to oven for approx. 10 minutes and cheese is golden brown. Serve immediately.

Serves 6

Yes, they're great! My brother used to make them and they were the best. Take the potatoes and soften with a little butter in microwave. In the meantime, finely dice onions and green pepper and add to potatoe mixture. Add one egg, a tsp. of flour and a little milk. Form patties and place in frying pan with melted butter over medium heat (actually, I recommend olive oil or something healthier than butter). Fry golden brown on one side, then turn. Voila! Enjoy.

My husband's version is to take in all probability approximately 2 cups of leftover masheds, a million egg, some flour, and a sprint or 2 of milk to get the splendid consistency. His different good one is shepherd's pie. i've got additionally heard you would be able to make bread or rolls with leftover masheds. i've got even made a mashed potato and leek soup some circumstances.

GROUND BEEF MASHED POTATO BAKE

1 lb. Ground Beef
1 small onion
1 can green beans
1 can cream of mushroom soup
6 medium potatos – cooked and mashed
1 cup chedder cheese


Brown ground beef with diced onions...drain...add can of mushroom soup...add can of drained green beans...salt & pepper...put in a caserole dish...add mashed potatoes on top leaving center open...sprinkle with shredded cheddar cheese...bake in oven on 350 for 30 minutes or so...until bubbly.

Sheppard pot pie. Brown 1 lb hamburger with your favorite seasoning & lil diced up onion. Drain, then spread on the bottom of a baking pie dish. Open & drain a can of corn. Sprinkle corn over hamburger. Sprinkle lil garlic salt over the corn. ~My Grandpa said that garlic salt brings out the flavor of the veggies. :)
Then top with the mashed potatoes. Optional Sprinkle Parm chez over mashed potatoes & bake til heated thru. 350 for about 30. Then you can eat it with ranch dressing or ketsup. :)

Leftover Mashed Potatoes Croquettes Recipe

Ingredients:
leftover mashed potatoes
shredded cheddar cheese
egg
bread crumbs
oil


Directions:

I don't have exact measurements, but these are great! Mix leftover mashed potatoes with some shredded cheddar cheese. Flatten into patties. Whisk egg briskly. Dip in egg and then in bread crumbs. Fry on both sides in oil until browned.

1 lb. cooked ground beef, browned with 1/2 c. chopped onion, drained well
1 (16 oz.) can green beans, drained

Leftover mashed potatoes
1 beaten egg
1/2 c. (2 oz.) shredded American cheese

Stir into ground beef, the beans, soup, water, 1/2 teaspoon salt, 1/8 teaspoon pepper. Place in square baking pan. Add egg to potatoes and beat until blended and fluffy. Spoon over meat mixture. Sprinkle with cheese. Bake uncovered at 350 degrees for 25-30 minutes until heated through.
When beef is one sale, I brown lots of it with onion and freeze in cookie sheets. Place in Ziploc bags to use when needed.

2 c. leftover mashed potatoes or 3 med. potatoes
1/4 c. milk
1/2 tsp. salt
Pinch paprika

FILLING:

1 onion, chopped big
1 tbsp. oil
1 lb. broccoli
1 green pepper, diced
4 med. carrots, diced
1/2 tsp. basil
1 bay leaf
3/4 c. chopped fresh tomatoes or 1/4 c. tomato paste & 1/2 c. water
1 bunch spinach or Swiss chard
1 tsp. salt

Here's a happy home for leftovers. The vegetables will vary according to the season. A small amount of leftover lentil, pea or bean soup may be stirred in with the vegetables.
Unless you have leftover mashed potatoes, steam potato chunks or cook them in fast boiling water until soft. Mash well, adding milk and salt. Save the potato water for bread making.

Cut broccoli into florets and stems. Peel and slice the stems in 1/4 inch rounds. Wash spinach thoroughly and cut into bite-size pieces.

Preheat oven to 350 degrees. Saute onion in oil. Add broccoli, green pepper and carrots, then the basil and bay leaf. Stir well and add tomatoes. Bring to a boil, cover, turn heat to low and simmer for 15 minutes or until vegetables are just tender. Stir in spinach. Add salt.

Put vegetables into a 9 x 13 inch baking dish. Spread potatoes over top and shake paprika over all. Bake for 10-15 minutes, until the potatoes are piping hot.

Serves 4-6.

1 can salmon (remove bones)
1 sm. onion, chopped fine or grated
1 stalk celery, minced
1 tbsp. lemon juice
1 c. (or more) leftover mashed potatoes (or 15 crushed fine saltines)
1 egg

Mix all ingredients well. Drop by large spoonfuls in skillet with a little oil or butter. Flatten when brown. Turn and cook other side.

1 3/4 c. sugar
1 c. cold mashed potatoes (leftovers fine)
3/4 c. shortening
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
3 eggs, beaten

1 c. buttermilk
2 c. flour
Nuts, if desired

Mix first 6 ingredients. Combine soda and buttermilk. Add alternately with flour. Bake at 350 degrees for 50-60 minutes. Use 2 loaf pans.

Everyone thinks of potato cakes..I like to mix them with some diced onion and cheese then sometimes if I have just a small amt of leftover veggies I'll mix them in.then use to stuff a meatloaf, ( I like to make individual meatloaves,but that is just me.)
This can be used as a one dish meal or as a meat and potato combination to go with your favorite side dishes.
