Mandarin is the official language in China and Taiwan. It is the only language taught in school, and so written, except in Hong Kong, where Cantonese is written.

Mandarin is the most useful, generally speaking. However, Cantonese or perhaps another language might be more useful, depending on your circumstance. I tend to use Cantonese more, due to my environment, although Mandarin is more widely spoken.

pinyin is used mostly for foreigner so that they can learn Mandarin. It transcript the Chinese caracters with our letters. Today if you decide to learn how to write, you will learn the symplified caracters. The traditional are used in Hong-Kong and Macau.

Mandarin Chinese is the official language of Main Land China. It is normaly learned in every school. After not all people speak it. Often in small village, the local dialect will be used.

In Hong-Kong, Macau and some part of Guangdong province, they speak Cantonese. The young generation in Hong-Kong don't even speak Mandarin.

Unless you have a reason to learn other dialect that's what you should learn. (since it is the most used and understood dialect, and is the basis of the written system.)

If it says "Chinese" in your course material, that means actually "Mandarin".

Perhaps learning the Bopomofo alphabet is also a good idea.

Mandarin is the official language. It opens more doors. If you're into movies and pop culture, Cantonese can also be useful.

Pinyin are the symbols for phonic values. It helps you pronouce the words from a written text like the dictionary.
