I have to do a speech on the Incas for a class in school, and I was thinking about taking food in for everyone. They used to use Quinoa, so I thought I might just take in some simple, cooked Quinoa because it's too difficult to do anything else.
It's a class of about 30 or less, and we're all teenagers.
Is that a good idea? How can I contain it, and will it last for very long?
Does it have to be kept hot?
Are there any spices I could add (ones the Incas may have used) to make it taste better?
Will they even like it!?
Thanks :P

Here's a salad recipe using quinoa:

Toasted Quinoa Salad

3/4 c. uncooked quinoa
1 c. diced carrots
1/2 c. chopped red bell pepper
1/4 c. minced parsley
2 sliced green onions
juice of 1 lemon and 1 lime (or 1-2 tbsp. of each)
1 1/2 tbsp. soy sauce or tamari
2 cloves minced garlic
1 tsp. chilli sauce (tobasco)

Rinse quinoa and drain. Put in a pot and dry toast until a few grains begin to pop. Add 1 1/2 cups water, bring to a boil, cover and simmer for 15 minutes, or until the quinoa has absorbed all the liquid. Remove from heat and let stand for 10 minutes. Fluff with fork and let cool.

Mix carrot, red pepper, parsley and green onion in large bowl. Add cooled quinoa and toss to combine. Whisk together lemon and lime juices, soy or tamari, garlic and chilli sauce. Pour over salad and combine well. Chill until serving time. We also enjoy throughing in a few steames, cooled snow peas. Serves 4 - 6.

Vegan Quinoa Salad Recipe

This quinoa salad recipe is surprisingly tasty and healthy! Whole grain quinoa cooks quicker than most grains and is an excellent source of protein with about 11 grams of protein per cup of cooked quinoa. Feel free to experiment by adding different veggies such as zuchinni, corn or even kale or spinach greens.
INGREDIENTS:
4 cups vegetable broth
1 1/2 cups raw whole grain quinoa
1 cucumber, sliced
1 red or yellow bell pepper, diced
1/2 cup lightly steamed brocolli florets
2 tomatoes, chopped
1/4 cup olive oil
1/3 cup lemon juice
2 cloves garlic, minced
dash salt and pepper, to taste (sea salt tastes best)
PREPARATION:
Cook quinoa in vegetable broth until it fluffs up, about 15 minutes, stirring occasionally.
While quinoa is cooking, whisk together lemon juice, olive oil, garlic cloves and salt and pepper.

When quinoa is finished cooking, allow to cool slightly then, toss with vegetables and lemon juice mix, stirring to combine well.

Add more salt and pepper to taste, and chill before serving.
