While I know that this may not be a gourmet as you might be looking for, my absolute favorite is a fudge recipe that I've played with for years. The original goes like this:
1 bag semi-sweet chips
1 bag butterscotch chips
1 can sweetened condensed milk
1 tsp vanilla
1 cup chopped walnuts (optional)
Melt the chips and milk over low-med heat until smooth. Remove from heat, stir in vanilla and nuts (if using) and pour into buttered 9" pie plate. Refrigerate for at least 1 hour.
Since I came across this recipe I've played with it and the best variation that I've found is to substitute the semi-sweet with a good quality dark chocolate and when adding the vanilla, also add about a 1/4 of heavy cream. My family loves this little indulgence.

Recipe Chocolate Pudding
4 tbsp cornstarch
2/3 cup sugar
1/8 tsp salt
3 cups milk
4 oz. bittersweet chocolate, chopped. Tip: For those special occasions, I suggest using Scharffen Berger 70% bittersweet chocolate.
1 tsp vanilla extract
Method
Mix cornstarch, sugar and salt in the top of a double boiler. Stir in milk and chocolate. Place over boiling water and stir constantly until thick and smooth. Cover and cook 15 minutes longer, stirring occasionally. Stir vanilla into recipe chocolate pudding. Refrigerate until chilled.
Gourmet Tip: For special occasions, or for something a little different, I'd recommend trying your pudding with Authentic Clotted Cream from Devonshire , a delicious topping alternative.
This traditional British favorite is available now for the first time in North America. Although the name itself is not so appealing, I promise you that you'll love the product. I tasted clotted cream when I visited Britian in 2000, and it's something you don't want to miss. You can order it plain, which is good enough in itself, or flavored with brandy, Grand Marnier, Drambuie or strawberry.

Wacky Chocolate Cake
I can't even remember how many times I've made this fast, easy, and remarkably good recipe chocolate cake. The recipe is unusual… but it works.
1½cup cake flour
¼ cup cocoa
1 ¼ cups sugar
1 tsp baking soda
½ tsp salt
1 cup water
1 tbsp white vinegar
¼ cup cooking oil
1 tsp vanilla
1 egg
Combine cake flour, sugar, cocoa, baking soda and salt in sifter. Sift into baking pan. In a cup, mix vinegar and water together.
With a spoon, make three "holes" in the dry ingredients that are in the baking pan. Pour oil in one hole, water/vinegar mixture in the second, and the egg in the third.
Mix until all flour is moistened. Check near the bottom of the pan to ensure that bottom ingredients are mixed. Smooth top of batter, then bake in preheated 375F degree oven. Test for doneness in about 35 minutes.
Cool and ice with chocolate frosting.

If you just frost this it's wonderful and so easy. Or, you can serve it warm with vanilla ice cream and hot fudge sauce & whipped cream and it's out of this world! For the cake-- mix, stir and store in the same pan. How much easier can that be? Enjoy!
Fast Fixin’ Chocolate Chip Cake
1Package Duncan Hines Devil’s Food Cake Mix
¼ Cup Oil
2Eggs
1 ¼ Cup water
13.9 oz size chocolate instant pudding mix
16 oz bag semi-sweet chocolate chips
Pour oil into a 13x9x2 inch pan. Tilt pan until bottom is covered with oil. Put remaining ingredients in pan. Stir with fork until blended. Scrape sides and spread batter evenly in pan. Bake until toothpick inserted in center comes out clean. (350• for 35 to 45 minutes) Cool. Use a knife to loosen cake from sides and serve directly from pan. Store leftover cake loosely covered. This is heavenly when served hot with vanilla ice cream and hot fudge sauce on top!! It’s also good with a creamy brownie frosting. Transports well also!
Creamy Brownie Frosting
3 tablespoons butter
3 tablespoons cocoa
1 tablespoon honey (or light corn syrup)
½ teaspoon vanilla
1 cup confectioner’s sugar
1 to 2 tablespoons milk
Cream butter in a small mixer bowl. Add cocoa, honey and vanilla and blend. Add confectioner’s sugar and milk. Beat with mixer until of desired spreading consistency. Yields about 1 cup frosting.
