Depends on what you want to spend and the effect you want. Marble will cost a bit more than granite, but gives a more refined feel (like a spa) to the space, while granite is easier to care for. You might try a faux marble in a low maintenance material like Corrian if you want the best of both worlds- classy look and easy care.
Yes you can replace it w/ a separate sink and whatever material counter top you choose.
As for the flooring anything you'd like. I prefer ceramic tile for ease of care. And it comes in most any colour/size you might like to mix and match any decor

Granite is the hardest compound and is more versatile. Marble works beautifully especially in the bath where the veining patterns and colors that appear can be used to create exquisite designs. Marble is more susceptible to dulling, scratching and staining. Marbles should be sealed once or twice a year. Granites should be sealed once a year.Note,using a sealer does not make the stone un-stainable. It simply fills the pores in the stone and make the staining process slower, thus giving you more time to clean a spill before a stain sets in. Otherwise, the usual clean regularly, don't use acidic or abrasive cleaners that will dull the finish over time. There are way too many factors to give you a ball park figure, call your local stone counter installers, they usually give free quotes. As well as the pricing, there are way too many colors to choose from, and also depends on what type of look you want to achieve and what would work with the rest of your decor.

not trying to be a smart a$$. this is the last place you want to ask for advice regarding something that could run you several hundreds of dollars for a vanity countertop. go granite, it is easier to care for and marble can be easily damaged with cosmetics and aeresol sprays ( marbe is much softer compared to granite )
check with local tile and countertop suppliers - you might pay a bit of a premium, but it's well worth it compared to the level of service and quality of work you'll be getting
and lastly - STAY AWAY FROM STORES LIKE LOWES OR HOME DEPOT - THESE PEOPLE ARE MORE INTERESTED IN WHEN THEIR NEXT BREAK IS THAN ACTUALLY GIVING YOU SOMETHING YOU'LL BE PROUD OF IN THE FUTURE. i tend to place little value on some high school kid who's working in the countertop department part time and is only interested in baggin some cashier after work
if money is the most important factor go to the big box stores, if quality is more important, go to a local tile/countertop supplier who has a showroom.
