Honey will begin to turn into sugar after an extended storage period. Heating sugared honey will re-liquify it but it will cause it to crystallize faster. You can't hurt honey by heating it unless it scorches. The best way is to boil a pot of water, take it off the heat, then submerse the jar of honey in the hot water for a while. If it is sugared really bad it doesn't hurt to submerse it in a boiling pot until it liquifies. If you're dealing with more honey than a jar or two you need to do it in a double boiler in order to prevent direct stove heat from carmelizing it.
