My fav is the goddess sandwich

1 baguette
1 avacado
2-3 tablespoons Goddess dressing (seasonaed olive oil usually rosemary and thyme)
tomato slices
basil leaves
sun-dried tomatoes (optional)

1)Cut the baguette into sandwich-sized sections, then length-wise and toast lightly.

2)Spread the avacado generously on both sides of the baguette.

3)Place tomato slices, sun-dried tomatoes and as many basil leaves as you would like atop the avacado layer on the bottom halfs of the baguette. Top with goddess dressing. Replace top halves to form sandwiches.

4)Serve with olives or kettle chips and a chai!

and a personal favorite of mine
This is a really nice dish to make when you want something hearty and filling. I like to accompany mine with brussell sprouts!

8 oz. tempeh
2 tablespoons olive oil
2 tablespoons roasted tahini
2 tablespoons shoyu
Dash of mirin

1)Make the marinade by mixing together the olive oil, tahini, shoyu and mirin in a bowl.

2)Cut the tempeh into cubes and toss in the marinade. Let sit for about half an hour.

3)Heat some extra olive oil in a pan and add the tempeh mixture. Saute over medium-high heat for a few minutes, then lower the heat and cook for an additional 15 minutes.

4)Serve with brown rice and a green vegetable!
