They were originally called "Hamburger Steak", after Hamburg, Germany - a large seaport, so sailors spread the dish from there all over the world.
Eventually, the names was shortened to "hamburger", and people analyzed this as being a compound of "ham" and "burger", so they started talking about "cheeseburgers", "fishburgers", etc. In linguistics, this process is called "back-formation".
