I've never heard of prochetta before. Though, if you mean pancetta, it's an Italian form of bacon.

Edit- Prosciutto is ham which is incidently from the same meat as pancetta.

Do you mean prosciutto? If so it's dry-cured ham. 'Prosciutto' is the Itlalian word for ham. It's chewy and salty and normally sold in very thin slices.
