My mother in law is undergoing chemotherapy at the moment, so I'd like to make some meals for her and my father in law to heat up, rather than her having to cook when she's tired and feeling ill.

Problem is she is a fantastic cook, so I'd like to make something they'll enjoy eating and that is healthy too.

Any ideas would be appreciated. She is Hungarian and my father in law is German, so any European recipes would also be good.

thanks in advance.

That is so sweet of you! That's exactly what family is for.

Check www.CookingLight.com

I was recently browsing through my annual cookbooks and saw some goulash recipes.

You can use Hungarian:

try making cold-dishes like salads, pasta salads, chicken and veg glass noodles and reheatable soups like minestronie, pumpkin, chicken where you can pop into your oven and get it piping hot 3 minutes snap.Wraps work too, you can try a variety of chicken, fish, corn and other vegs and cold-cuts for fillings.

Not remotely german or hungarian, but nevertheless healthy and delicious!

Meals can be cooked in advanced, just remember to cling wrap it or store it in tupper wares and put it in the coldest section of your fridge (make sure its eaten within half a day in order to ensure quality and nutrients in the food). Invest in a good microwave oven and you can have ready-made meals in no time!

Any soups are good to freeze and really easy to heat up--I keep a couple different kinds in zip-top bags in the freezer for nights when I just can't deal with cooking.

Chili and stews are good to freeze, and lasagna and other stuffed or layered pastas work really well--just pop them in the oven from frozen and they cook pretty quick.

How about spaghetti? Make sauce with tomatoes and low fat ground beef or turkey. I often add chopped or pureed veggies to helpmy family get 5 a day. They can make the pasta themselves. The whole grain pastas take a little getting used to, but they are so much healthier.

Freeze a Lasagna recipe. That can be done days in advance and holds up beautifully when frozen.

You could try any TV dinners, but you wouldn't need to cook just heat them up.
