I need to dehydrate some meat but I dont have a dehydrator. I'm assuming this can be done in an oven? But what temp do you use and how long do you "cook" it for? I just want to make it dry and maybe crunchy, not burnt.

In the oven at about 160-165 degrees.

"""Why is Temperature Important When Making Jerky? Illnesses due to Salmonella and E. coli O157:H7 from homemade jerky raise questions about the safety of traditional drying methods for making beef and venison jerky. The USDA Meat and Poultry Hotline's current recommendation for making jerky safely is to heat meat to 160 °F and poultry to 165 °F before the dehydrating process. This step assures that any bacteria present will be destroyed by wet heat. But most dehydrator instructions do not include this step, and a dehydrator may not reach temperatures high enough to heat meat to 160 °F.

After heating, maintain a constant dehydrator temperature of 130 to 140 °F during the drying process is important because:

* the process must be fast enough to dry food before it spoils; and
* it must remove enough water that microorganisms are unable to grow.""""

After marinating it, it can be dried (jerked) in a low oven, about 200 F. It takes quite a while, but it's so much better than store-bought jerky.

I do it every year after we go hunting. Marinade it over night.Bake it on 170 for 8 to 10 hours. Everyone loves it.

Just hang your meat. run a string from one wall to another in a room. and season it and hang it. some people lay it on a screen instead of hanging. it is pretty good. and it is impossible to burn it.

Wash it under tap water, wait for drying, and cover it with salt. Wrap it hardly with stretch film, and keep it in refregirator.
