The face,if you are talking about a poppet valve which I must presume you are as this is cars and transportation,is the area that contacts the valve seat in a cylinder head.The margin which prevents the valve from burning is ground parallel to the stem at the outer edge of the face.

The smooth upper outer edge on the stem side. A valve job partly consists of grinding the valve rim and the seats on the heads to mate smoothly together for a good seal. It takes "special" machines these days but used to be done by hand. Precision CNC machining does near perfect jobs today.

depend on the kind of valve if is a brass gate valve it will be the "gate" if is a ball valve will be the seat,,
