Refridgerated? in a dark place? I like fresh garlic, and always buy more than I need it seems.

One great thing to have is a garlic cellar. It is a covered terra cotta pot with a lid and breathing holes. It helps to keep your garlic from sprouting those little green shoots out of the top.

Store it in the refrigerator. If you go to any foodservice establishment that is where they keep it.
