If food is not preserved by freezing, canning, drying , or pickling it is alive but will then slowly die without preservation. The natural enzymes in the food and then bacteria from the environment including molds, and fungus attacks the food. One of the conditions you see during this breakdown is called STALE.

Bacteria and Fungi. Bacteria are the things that break down everything. If it doesn't go into the fridge or is in the fridge for too long, it will go stale.
