I want to make some instant cheese sauce for
backpacking trips. Something akin to what you get
in those lipton noodle packages or in kids mac & cheese.

the key is to be lightweight, need no refrigeration, and just need water or a little oil to reconstitute.

some ingredients i've thought of are

parmesan
powdered milk
popcorn butter/salt


what else?

well, the store bought stuff is ok
...once....but any variety is good.

and, out of principle, i don't like to pay
50 cents for something that costs 2 cents to make and 10 cents to package.

i would add some instant potato flake just to add thickness to the sauce. (just a bit).

or do this one:
1/3 cup dehydrated cheese powder (American cheese)
3 Tbsp. nonfat dry milk powder
3 Tbsp. dehydrated butter powder or flakes
3 Tbsp. flour
1/4 tsp. salt
1/8 tsp. white pepper
1/8 tsp. onion powder
PREPARATION:
Combine all ingredients in a small bowl and mix thoroughly with wire whisk. Store in tightly closed container in the refrigerator.

Ok, if you are going to have instant cheese sauce, why not just buy the Easy Mac stuff and use the packets from there instead of driving yourself crazy trying to make your own? If you don't use the noodles, save them for another meal.

INGREDIENTS:

* 1/4 tsp. salt
* 1/8 tsp. white pepper

To make cheese sauce, combine 1 cup hot tap water with 1/2 cup Cheese Sauce Mix in a small saucepan over medium heat.

I have used cheese whiz melt it and it's the same as thoses pkg you mix up .
