I don't have vanilla icing but I do have chocolate icing. What else can I put to make it taste good?

Cream Cheese Icing
One 8-once package cream cheese, softened
1/4 cup butter, melted
2 tbs vanilla
One 1-lb. box confectioner's sugar
1. With an electric mixer, beat the cream cheese until it is light and fluffy.
2. Gradually add the melted butter, beating until it is completely absorbed.
3. Add the vanilla and the sugar, beating well after each addition so that the icing is smooth.
Remove the cooled cake from the pan, then smooth the icing over the top and sides.

Do you have a can of whipped cream? (doubt you have whipping cream in the house). That works really well on carrot cake. While yes cream cheese frosting is traditionally served on carrot cake I'm not a huge fan of it. I've served it in the past with a chantilly cream (when you mix a fresh vanilla whipped cream) and it was yummy. But if you don't have it a squirt of whipped cream would be really good in a pinch too.

CREAM CHEESE ICING:
16 oz. cream cheese
1 1/4 c. powdered sugar
1 tsp. vanilla
Beat oil, sugar and eggs together. In large bowl mix flour, baking soda, salt and cinnamon. Beat together with egg and sugar mixture. Stir in vanilla, mixing well. Add carrots, coconut, nuts and pineapple. Mix until well blended. Pour into greased and floured cake pan. Bake at 350 degrees for 1 hour in bundt pan.
ICING: Cream together cream cheese, powdered sugar, and vanilla, blending well.

Mix cream cheese with some icing sugar and add a couple of drops of orange juice - that is the recommended icing for any type of cake or muffin that has carrot in it and you will find that is what commercial places (restaurants and coffee shops) put on their carrot cake.

Yes, Cream Cheese is good on carrot cake, mix it with powdered sugar first. Or what about mixing cream cheese, sugar, with grated coconut. Or grated coconut with a butter frosting, or just butter frosting. You could make it yourslef with butter anc powdered sugar, if you don't have vanilla add a little, like half a tea spoon of lemon juice.
