the servers to wash the china, she was doing disposables before, so now with the dishwashing included how much should I be tagging on for this service. You figure there will be 175 dinner plates, dessert plates, salad plates, glasses, champagne glasses and cutlery. I am sure there are some caterers on the board that can assist me with this. Any type of info would be greatly appeciated as I am just starting out. THANKS!

My caterer was going to charge me a flat $100.00 fee for a dishwasher to be on duty and my reception will probably have about 150 people. I went with disposables instead.

Is it a dinner only , or will there be a bar after dinner ?
is there a set time to be in and out of the facility? will you do a cleanup the next morning ? or the same day.

How is the china being provided ?

There are some party rental services that will wash everything when it is returned. They simply require plates to be scraped and racked.

Does the reception hall have a dishwasher and glasswasher ?

If you are handwashing I would allow four hours for a dishwasher at whatever rate you charge for him.

Someone will need to clean up after if its an open ended party.

Have you allowed enough time and staff for setting up and clearing the dining room. ? Are the servers doing that job or just serving ? make sure you have added your costs into the charge you make for the servers. (payroll, insurance etc , uniforms and cleaning)

call a couple of caterers in your area and ask them how much they would charge to cater a wedding for 175 people including servers and dishwashing.....
