JELLO pudding that has a date stamped saying it went bad a while ago, but I was thinking maybe it's just best taste if used by then, and not necessarily goes bad beyond use by then.

My common sense says that it would be perfectly safe to eat it, but the flavors might not be as good. I can't think of any ingredient in a pudding mix that would spoil and cause food poisoning--unless you made it with spoiled milk passed it's expiration date lolol.

But if you want to play it safe, I would say don't just toss it but look for an 800# on the package and call them and ask if it is safe. Almost all the big brands have numbers on them and you could confirm that way and have no worries.

Generally the dates on food packages are conservative estimates of the shelf life of the product. Not that it will do you any harm, just that it may lose some of its nutritional value and not cook up as well.
If you have any doubts, it's better to error on the safe side, and toss it out.

When in doubt pitch it out is my rule. You'd be surprised at what can cause a bout of food poisoning even Pudding Mix

Go ahead and use it. It just taste between if you use it before date stamped on top. It will Be fine.

If it does not have bugs in it, then it should still be ok to fix. That is just the shelf date.

I think I heard that if you make something expired all the ingredients should be expired and then it will be okay to eat

Be careful, if I were you I won't eat it. You might suffer from food poisoning after.
