**SEAFOOD STEW**
2 medium carrots, sliced
2 medium celery stalks, sliced
1 large onion, chopped
1 clove garlic, finely chopped
1 (14.5 ounce) can no salt added stewed tomatoes, undrained
2 cups water
2 teaspoons low sodium beef bouillon granules
1 medium potato, cut into 1/2 inch pieces
1/2 pound lean fish cut into 1/2 inch pieces
1/4 pound peeled and deveined raw medium shrimp
1 (15 ounce) can great northern beans, rinsed and drained
1 small zucchini, cut half then sliced
1 teaspoon fresh thyme, chopped
Spray large soup pot with nonstick cooking spray and heat over medium heat. Add carrots, celery, onion and garlic and cook until tender, stirring occasionally. Stir in tomatoes, water, bouillon and potato and heat to boiling. Reduce heat, cover and simmer about 15 minutes. Stir in fish, shrimp, zucchini and thyme and heat to boiling. Reduce heat, cover and simmer about 10 minutes or until fish flakes easily with a fork.

Hi Alison, Stir Fry Is The Quickest Easy Cooking Around Or If You Like Fish, Griddle Some Of Your Favourite Fillets On The BBQ Hot Plate And Add Potato Wedges With Just A Touch Of Olive Oil And Sprinkle With Salt Crystals As They Fry.

Rachel Ray's meatloaf muffins are delicious!! It's possible some of these ingredients could be considered fancy so i'm not sure if this will help.. but make it sometime [= Oh and the recipe may seem long and hard by looking at it, but once you read through it a few times it's quite simple. I've made them plenty of times.. it's easy! :D (from the show 30-minute meals) 1 2/3 to 1 3/4 pounds ground sirloin 1 medium onion, cut into chunks 2 ribs celery from the heart of the stalk, cut into 2-inch pieces 1 green bell pepper 1 large egg plus a splash of milk, beaten 1 cup plain bread crumbs 2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick) 1 cup smoky barbecue sauce 1/2 cup tomato salsa 1 tablespoon Worcestershire sauce Vegetable oil or extra-virgin olive oil Micro-way-cool Bacon and Green Beans, recipe follows Smashed potatoes and cream cheese, recipe follows Preheat oven to 450 degrees F. Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes. Cut open 1 muffin to test that the middle is cooked through. what about Vegie couscous...
In the stock you are going to make the couscous in, finely chop some carrots, beans, broccli, cauliflower, a tomato, sweet potato, and whatever other vegies float your boat. Add a dash of balsamic vinegar and olive oil. Also some corn kernals are good. Bring the stock to the boil (read the packet of instant couscous to see what ratio of stock to cous cous you need) after the vegies have cooked, throw in the couscous take off the heat, stir once, put on the lid and wait for 5 minutes. Fluff it all up with a fork, fluff in some sun dried tomatoes, freesh herbs and roasted capsicum if you like. Then enjoy!! quick & easy

Crock pot meals are great because you can have your meal ready when you come in the door in the afternoon! Tacos are easy too, as well as soup with sandwiches. I find that it helps if I sit down and think of all the foods my family enjoys, write them down, then decide what to have for the week. Then when I go shopping, I make sure I get all the ingredients to make those meals. I like to cook in large quantities too, like homemade soups, lasagna, etc... and eat 1/2 one night, and freeze the other half for another night!

This is one my b/f and I enjoy and it is easy.
It's called Souperburger.
Brown one lb of ground beef (your choice of cut) with some diced onion and bell pepper.
Drain off fat if there is any.
Add one can of Campbells Vegetarian Beef soup (the alphabet kind - and do not dilute with any water).
Also add a tablespoon of dry mustard. You can use prepared mustard if you don't have the dry - the dry just seems to add that little something extra. And add one-quarter cup of ketchup. Heat thoroughly and serve on warm toasted buns.
You can serve this with a simple salad or your choice of chips.
Believe me, this is good!!

How about a BLT? or Eggs and bacon?
Sometimes simple sandwhiches or evevn breakfast foods (designed to be quick before running out the door) are the easiest.

Squish raw hamburger with diced onions and diced green peppers and one raw egg. Add spices to taste. Roll up in individual leaves of cabbage 1/2 cup of the hamburger mix each and skewer with toothpicks to hold. Boil in soup of choice. Yum.

I really like both fruits and fruit and vegetables better, however they look and taste. You desire a little of both.

In the event that it's a fruit it includes seeds, otherwise it's a vegetable. And vegetables are usually grown in the ground while fruits are grown in trees.
